I do the same thing with rice. I add any veggie I need to get rid of.
We do potato soup with ham or bacon. My son would eat soup every night

You have been on my mind so glad to know your okay even if you are sick I will pray for all of you that you feel better soon. Soup is always a go to for me when I am sick or even just for a very cold winter day that will be on the menu tomorrow we are suppose to get 4 to 6 inches of snow tomorrow in Tennessee. I hope you feel better soon.
Glad to “see” you’re doing okay. The sickness this year is no joke 😬 One of my go to meals is “Hoosier Stew” It’s chunked smoked sausage, canned green beans, and quartered potatoes (washed well, but unpeeled). I usually serve it with cornbread or sourdough bread.
