Wild Plum Dipping Sauce

When life gives you plums! 👌🏻😋🌿 Plums are loading up the hedgerows here in Berkshire at the moment. This is a great way to use them up. I like to use plums with different levels of ripeness to give it some real piquancy 👌🏻😋 Recipe: 📕 500g plums 1 cinnamon stick 1 onion 2 cloves garlic 1 thumb sized piece ginger 1 tsp 5 spice 1 tsp Korean chilli flakes 100g dark soft brown sugar 100ml red wine v...

Wild Plum Cheese Recipe
มุมมอง 96714 วันที่ผ่านมา
I used a mix of ripe and unripe cherry plums 😋🔴🟢🟡 I like to use more unripe plums then I do ripe. It balances out with the sugar and gives you the ultimate sweet and sour sensation! Making it perfect to go with strong cheeses and salty cured meats. 🌿 I like to take a piece and dry it out fully before dicing it up and dropping it into sauces and gravy’s for little chewy pops of plum goodness 👌🏻🔥...
Nocino aka Green Walnut Liqueur

See you in six weeks time 🌑 🌱😋 I personally like to add the sugar at the end of the process. This way I can control it more and add it to taste 👅 I like to add sugar to one to create the delicious liqueur and keep one sugar free for cooking and cocktail making 🥳 Nocino liqueur : 20 green walnuts approx 2 fig leaves Meadow sweet flowers, dried or fresh 1 litre 40% proof vodka www.chefjoebartlett...

Now I’m happy with the flavour I’ll store the bottles in the fridge to slow the ferment down and take the explosive edge off 💣 😋 The stages: 📕 Brew your elderflower, pine or lemon slices, sugar and water for 2 weeks 🥂 Strain through a fine sieve and bottle up 🍾 Burp or degass daily to let the carbon dioxide out and prevent the bottles from exploding 💣 After 7-10 days the elderflower champine sh...

I’d they oxidize blue it means they have psilocybin in them!!
Plums are my favorite fruit, and this looks so good! The texture looks lovely, and I could see this being really versatile for both sweet and savory dishes.
Cheers mate.
Isn't this just marmalade?
you made a jam. Not cheese
He explained why it's called "cheese"
Jam is cooked to a lower temperature giving it a much softer set. This plum cheese or in Spain it’s called membrillo is cooked to a much higher temperature making it firmer and much more concentrated in flavour 👌🏻😉
@@ariwright206thank you 😉
@@chefjoebartlett doesn't make it a cheese
@@ariwright206 Still doesn't mean it's a cheese. It's still a jam.
Yummyyyy thanks for the recipe!!! What kind of cheese do you like having with plum jam?
I like a good blue cheese or a creamy goats cheese 👌🏻
That freezer bag is smart! Also, thank you for the recipe. I was thinking what to do with the extra ripped bananas.🙏🏽
Walnuts only tincture ( the same stage of friuts) is good for parasites to eliminate from the body, stomach flu, sickness and few other things. Thank you for your recipe.
That’s good to know. Thank you for sharing. I need to start making more tinctures from the things I forage
What does that fruit taste like?
It’s not a fruit. It’s a nut. “Making Green Walnut Liqueur”.
At this stage theyve got quite a unique flavour similar to bay leaves 🍃
Looking forward to the recipe! Such great inspiration! Thank you from Switzerland, where I'll be visiting my favorite Walnut Tree tomorrow to see if I can harvest:)
Try it with banana leaves and some balsamic on the peaches and its a whole nother beast 🤤
Hi love it these videos motivates me to forage and learn about all this stuff
dude you are legendary I appreciate all your content over the years
That’s good to hear. Thanks.. I enjoy doing it 👌🏻
@@chefjoebartlett do you care if I email you?
From its colour, it doesn’t seem to be a sourdough starter from « standard » white wheat flour. May I know the type of flour and if you use honey or any fruit to activate the starter ? Thx
Winter here in Australia 🇦🇺 loads of butter & honey for me 🐝 💛
What does fig leaf oil taste like? Chlorophyll? Green? Lettuce? I'm intrigued.
Idk if it good
herby and a bit nutty with a slight bitterness
It tastes like green figs and coconuts 🥥 😋
It’s delicious.. the fig leaves taste like coconut 🥥
Forgot I had a bottle of copella apple and elderflower under my van seat for a few days, half empty. It had fermented, the bottle was nearly twice the size! Went off like a bomb when I opened it.
😂😂😂😂 yeah anything like that can be lethal 💣
@@chefjoebartlett elderflower - nature's undiscovered explosive.
❤❤❤
I have been surrounded by fig trees my whole life and never used them for cooking but thanks to your videos I realised how delicious they are. The weird looks I get from the neighbours while picking the leaves from the trees on the sidewalk are worth it
Hahahah
I TRUSTED YOU!
What's the flavor profile on this? This seems like it could be a cool ingredient to play with
It’s like green figs/coconut and an almost peach like flavour
don't fig leaves make you itch? I live in an area with tons of rig trees and everyone I know finds them ichy
That’s the milky sap that comes out when you break the leaves or stems. It can irritate the skin
@@chefjoebartlett so if you wash them they are fine to eat?
@@miltos3692absolutely.. l eat them every year. They’re good candied 👌🏻
@@chefjoebartlett nice! We have lots of fig trees in athens and I never thought of eating them. I wiii try it for sure
@@chefjoebartlettrecipe for candied leaves please!!
Somewhat surprised there are not russians raiding the comment section. They also got the small pinecone jam and candies there.
Hell to the no.
Hi chef, chocolate has caffeine in it so maybe not as a bedtime brew
O TH-cam me indicou e eu estou muito entretido
Super cool never even heard of that kind of mushroom ❤
this look like rabbit poop
I’m saving this because I need to experience it before I see my maker.
Looks yummy, just reminded me that I have some raspberry and white chocolate scones that I'm going to munch on now
What do these taste like, for reference? I'm imagining something like normal capers, and maybe some slight alium flavor?
I'd say if you have to boil the poison out of something several times, cover it with sugar and juice just to make it edible .... It's 99% likely it wasn't meant to be eaten in the first place 🤯 🤔🙌
Hey Joe, I’ve recently come across your channel and I have to say, what great content you make for the number of subscribers you have. Such nice recipes!! Thanks.
I looooooove grilled gem stones💕
No.. Just no
0:43 what is it that you've scraped?
It’s leaf litter and debris that falls from the tree and engrains itself into the mushroom 👍🏻
Beautiful, had these at Noma a few years ago and been meaning to replicate. Thanks.
I feel like this is a joke or something...There's no way that taste good... has anyone tried making this?... how did i even get here?
Pinecone party liquor!!
Not nearly as scrumptious as tree bark marmelade.
I’m just gonna say it. It looks like poop soup. 🤨👍
coming up next is concrete jam made from crushed rocks
I thought those were cooked silkworms at first glance
Hello, i have seen many videos that use a starter like ginger bug. Wanted to ask if that necessary, because you dont use it. And i dont like ginger
