Elderflower Curd Recipe

Cook until the curd coats the back of a spoon or it hits 80C on the temperature probe. 🤓🤌🏻
Its important to cook the eggs out to help richen the curd 🌿
Serve with pancakes, use to sandwich a Victoria sponge, on toast or over roasted peaches 🍑 🤩
Recipe:
100g elderflower cordial
3 egg yolks
100g unsalted butter
Juice and zest of 1/2 a lemon or orange 🍋
