Turkish Lentil Bulgur Balls (Mercimek Köftesi)
Recipe makes ~ 24 balls (approx. 1.5 inch)
Ingredients:
1 cup dry split red lentils
2 cups water (to cook lentils)
1/2 cup dry fine bulgur
1 small onion, chopped
1/3 cup of fresh parsley, finely chopped
1/3 cup fresh dill, chopped
1/3 cup green onions, finely chopped
1 teaspoon paprika
2 tbsp tomato paste
1 teaspoon red pepper flakes
1 tbsp Cumin
1/2 tsp salt
1 teaspoon black pepper
2 tbsp extra virgin olive oil
juice of whole lemon
Optional: 1 tablespoon pomegranate molasses (no refined added sugars)
Directions:
1. Cooking the lentils in water for 10 minutes
2. Then add dry bulgur to the lentils and simmer together covered for 30 min until bulgur is soft.
3. Drain any leftover liquid.
4. Let the mixture cool and then refrigerate.
5. Once it is cold then add the rest of the ingredients and form the balls.
6. Serve on lettuce leaves and top with lemon juice.
Nutrition Info (per 3 balls)
164 calories
7.5 g protein
26 g carbs
5 g fiber
162 mg sodium
322 mg potassium
114 mg phosphorus

I am wanting to understand if kidneys are struggling to keep up with my water intake why maintaining a very low sodium diet can help them keep up so i can drink more fluids? I hope this makes sense. I want to understand how salt slows them down. Ok thank you. 💕

Thanks so much for this pasta recipe. I've been mainly eating salads, beans, vegetables and missed the warm food. I will be checking back everyday in hopes of bring more food that has a taste. I'm new to CKD but had it since 2021 and my doctor kept telling me I didn't have anything wrong with my kidneys. he retired Dec. 2023 and the fill in doctor told me immediately I had CKD. I'm 88 stage 3 GFR 46 at last blood work and would like to live a few more years so I'm thankful my dietician told me about you.

What about mint tea?
Mint tea is generally a good/safe tea too! Just make sure it is just the mint and doesn't have other herbs added to it (since those may or may not be safe for CKD).

Avocados are a higher potassium food. So if you have a potassium restriction, you may need to limit the portion. But that doesn't mean the food is completely off limits! 1/4 of an avocado is ~ 175 mg potassium.
I drink dandelion tea, found at the larger Walmarts. Helps with prevention of UTIs.

I believe kugel uses grated potatoes right? If so, you can grate them and then double boil. I haven't tried it and don't know exactly how it would hold up, but you can always give it a try!
If one is making chowder, do you still double boil in water or could one add potatoes to the chowder after first boil and bring to a boil a second time in the chowder?
You could definitely do that. But if you don't drain the liquid it cooks in, you don't lose as much potassium (since it is leached into the water). So you would remove some potassium with the first boil. And then you would obviously be consuming the chowder liquid with the second boil, so you would still be getting some of that potassium from the potato in the chowder liquid.

I love Hint water. Is it safe to consume more than one of those? Ingredients says water and natural flavors and that is it.
It shouldn't be an issue to consume more than one. But plain water is best as your main drinking water. And then the naturally flavored waters can be used when you need something more exciting than water :)

Do too many soda drinks raise your blood calcium
I am not sure about them raising blood calcium. But soda (both regular and diet) are not good options to consume on a regular basis (high in added sugar or artificial sweetener) and many contain phosphate additives.
After the 2nd boil place them in cold water and refrigerate another 16 hours. This will get the potassium down to only about 15% remaining.

Soy is estrogenic and is bad for any ones health. If not born with pancreas malfunction sugar IS the cause of your kidney disease. The KETO diet, Protein and fat are completely safe for your kidneys. Along with a good salt, Mined salt preferred as salt HELPS your heart and tissues. If you REALY want to know the proper human diet and for kidney and diabetics, Dr. Ken Berry on TH-cam... Stay out of the processed food aisles. God bless.

Before my kidney disease, I used to drink ACV with Lemon juice. I would like to go back to adding real lemon juice. What are your thoughts? The concoction I made was 2 cups warm water, 2 tblspoon lemon juice and 1 tblspoon of apple cider vinegar. I always felt so good and energentic throughout the day. I would drink it just before bfast.
That shouldn't be a problem. Both lemon juice and ACV can be used with CKD (only restriction would be someone post transplant would want pasteurized ACV). The important thing is making sure they are either used in sauces/dressings/cooking or mixed with plenty of water to avoid esophageal damage and tooth enamel erosion....but it sounds like you are mixing with plenty of water! :)

Dates can definitely be used as a natural sweetener in desserts/recipes. It would depend on the recipe, but typically a few dates are used to make many servings, so the amount of sugar is minimal, and dates come along with fiber! I will try to get more dessert recipes using dates....check out plantbasedkidneys.com/recipes/ for all the recipes I currently have available :)

You can, but it doesn't melt.

Dave's has some good options too. Their thin slice varieties are lower in sodium :)

The carb to fiber ratio for this recipe is low since beans are a high fiber carbohydrate!

You could use plain yogurt instead and still get some creaminess. Or avocado.
Is it per meal or per day?
Estimations for protein are per day. Spread out amongst 2-3 meals depending on individual needs/intake.

I would highly recommend getting with a renal dietitian 1:1 so they can assess your intake and needs and labs/meds/supplements, etc and make sure you're meeting those needs!
