    I make the same soup. I add way less cream and I can it. Process in pressure canner. Bring up to 10 lbs. process 10 minutes. I also add some lemon juice. Never lost a jar yet. It’s a staple in my home.

      So I figured if that works I would give it a try. All the tomatoes are an asset. and I add lemon juice to the soup. With 14 guarts I add 1 pint of cream. I’ve done this two years in a row. I bring it up to 10 lbs and turn it off. Never lost a jar. Neither canning the cream. Of course this is rebel canning at its best.

    Hello everyone, I’m new to canning and new to this channel. I have been doing so much research on canning low acid foods and just love that everyone here is being honest about water bath methods. It’s difficult to find low acid water bath recipes online since they’re technically not approved. 😢
    Anyway, I have a question. When it comes to botulism, I have read that home canned items (low acid) can be boiled (cooked in general??) for 10-20 minutes (depending on the item) prior to consumption and that will kill the spores…!! Is this correct?

    • @CajunBoudreaux
      @CajunBoudreaux 2 หลายเดือนก่อน +2

    Such a timely video, since I'm canning more tomatoes these days. I also tried pressure canning roasted yellow and red peppers but they don't look as gorgeous as the jarred ones from the store. For some reason they shrank in the jar, giving them a squashed together look. But if they taste good, who cares. We'll soon find out.
    Your soup looks like a soup we'd love, so I'll be making it shortly.
    When I add cream to a tomato based soup, it tends to curdle. I noticed yours didn't. Would the fat content be a factor? I use 18% or whipping cream.
