Ingredients-
For the Pakwan-
1/2 cup whole wheat flour
1/2 cup maida
2 tbsp Oil + to brush
1/4 tsp salt
1/4 tsp ajwain
Water to knead the dough
For the Dal-
1 cup chana dal, soaked
Turmeric
Salt
Hing
Chillies
Amchur powder
Ginger
Red chilli powder
Others-
Imli chutney
Green chutney
Chopped tomatoes
Chopped onions
Green chillies
Chopped raw mangoes
Coriander leaves
Chaat masala
Lemon wedges
Vishesh Tippani-
- Rubbing flour with oil gives desired crispiness. Hence, do not skip it.
- Do not over knead the dough. Just combine well, cover and rest for 30 mins before rolling.
- Ensure to keep the dough covered at all times. this prevents it from drying out.
- Do not add any dry flour while rolling the pakwans.
- Roll the pakwan super thin & coat it with a thin layer of oil on both sides before baking. This will give the best texture.
