    망고 과육을 둘러 장식한 망고 치즈케이크를 만들었어요~
    코끼리 망고라는 아주 큰 망고가 있길래 신기해서 구입해 과육을 길게 슬라이스해서 자연스럽게 옆에 붙였는데 꽃잎을 붙인 것 같이 은은한 느낌이 나더라구요~
    망고 퓌레도 듬뿍 들어가고 중간에 망고 과육도 넣어 같은 망고지만 다른 식감과 맛을 느낄 수 있도록 해봤어요~
    노랑색과 흰색의 조합이 따스하면서도 편안한 느낌이 드네요~
    퓌레에 넣은 레몬즙과 치즈케이크 반죽에 넣은 요거트가 상큼함 맛을 더해줘서 더 맛있는 것 같아요~

    ▶틀 사이즈 Mold size : 15cm x 7cm
    ▶재료
    망고 300g
    설탕 60g
    레몬즙 7g
    젤라틴 6g
    생크림 60g
    크림치즈 200g
    설탕 50g
    플레인 요거트 50g
    바닐라익스트랙 3g
    레몬즙 5g
    젤라틴 5g
    50% 정도 휘핑한 생크림 160g
    부순 다이제 쿠키 80g
    녹인 무염버터 35g
    슬라이스한 망고
    ▶레시피
    1. 냄비에 갈은 망고와 설탕을 넣고 저으며 끓이다가 살짝 걸쭉해지면 레몬즙을 넣고 섞은 뒤 불에서 내린다.
    2. 찬물에 10분 정도 불린 젤라틴의 물기를 제거하고 넣고 섞은 뒤 생크림을 넣고 섞는다.
    3. 밑면에 랩을 붙이고 무스띠를 두른 12cm 틀에 150g을 정도를 넣고 평평하게 한 뒤 냉동실에서 30분 정도 굳힌다.
    4. 크림치즈를 부드럽게 풀고 설탕을 넣고 섞은 뒤 플레인요거트, 바닐라익스트랙, 레몬즙을 넣고 섞는다.
    5. 찬물에 10분 정도 불리고 물기를 제거한 뒤 전자레인지에 10초 정도 돌려 완전히 녹인 젤라틴을 넣고 섞고 50% 정도 묽게 휘핑한 생크림을 넣고 섞는다.
    6. 12cm 틀에 조금 넣고 평평하게 한 뒤 냉동실에서 20분 정도 굳힌다.
    7. 부순 다이제 쿠키에 녹인 무염버터를 넣고 섞고 15cm 틀에 넣고 꾹꾹 눌러 모양을 잡은 뒤 냉장실에서 10분 정도 굳힌다.
    8. 슬라이스한 망고를 틀 안쪽 벽면에 붙이고 전자레인지에 10초 정도 돌린 치즈케이크 반죽을 조금 붓고 평평히 한 뒤 냉장실에서 20분 정도 굳힌다.
    9. 망고 100g과 치즈케이크 반죽 50g을 섞은 뒤 12cm 틀에 넣고 평평하게 해 냉동실에서 30분 정도 굳힌다.
    10. 12cm 틀에 굳힌 것을 틀에서 꺼내 15cm 틀 가운데 올리고 무스띠를 제거한 뒤 남은 치즈케이크 반죽을 모두 부어 평평하게 해 냉장실에서 20분 정도 굳힌다.
    11. 망고 퓌레를 틀에 채워 붓고 평평히 한 뒤 냉장실에서 2시간 정도 굳힌다.
    ▶Ingredients
    300g Mango
    60g Sugar
    7g Lemon juice
    6g Gelatin
    60g Heavy cream
    200g Cream cheese
    50g Sugar
    50g Plain yogurt
    3g Vanilla extract
    5g Lemon juice
    5g Gelatin
    160g Whipped heavy cream (whipped up 50%)
    80g Crushed digestive cookies
    35g Melted unsalted butter
    Sliced mango

    Your mango is so different from us here in Philippines, ours are much more soft and very easy to smush but yours is much harder and perfect for cheesecakes to hold it shape.

    1:21 says "mold lined with a wrap and MUSTARD". This is not right, DO NOT USE MUSTARD. Just copy the picture to line inside and wrap outside the mold!!!! NO MUSTARD

    Thank you for the wonderful recipe! And i actually upsize to 23CM cake pan, and i encountered 1 issue: the middle layer and the creamcheese layer doesn’t combine well, it will separate or drop out the moment i cut the cake. May I ask what could be the reason here ? ❤

    만들어 보려고 영상 보면서 필기중인데요~ 혹시 설탕양을 줄여도 될까요?? 신랑이 너무 단건 안먹어서 살짝 달달한 정도로 만들어 보고 싶은데 설탕양을 얼마까지 줄여도 될지 궁금해서 문의 드려봅니다~

      저도 단걸 좋아하는 편이 아니라 많이 달지 않게 만드는 편이에요~
      설탕을 10g 정도는 줄여도 좋지만 너무 많이 줄이게 될 경우 단맛이 적어지면서 느끼함이 더 느껴지고 맛이 밋밋한 느낌이 날 수 있을 것 같아요~
