Try with significantly less water and try to pull it like hand-pulled noodles after it's off the fire until it's firm to form fiber strands. The dough will end up with a much more enjoyable texture and a more concentrated flavor

The dough sticky thats ok,
You have to use sugarsyrup as i did in the video so you can work with it easier
