    WONDERFUL!!! Dinner at eight and a movie to boot! I love it when you cook from Madame’s book. You executed the recipe perfectly! I couldn’t help but think when seeing it plated that its a shame that dishes never look that beautiful when presented in most restaurants these days. I’m sure that the ladies going in to dinner in that fabulous film clip would have expected nothing less. Thank goodness we still have men like you, Peter, who know how it should be done! You ALWAYS strive for excellence when preparing your dishes…and it shows!

      Salut Kimberly.
      I googled "dinner at eight" (because the clock struck eight as I was filming) and I found a movie from 1933! Have you seen it? I'm going to watch it in bed tonight.
      Mme S A is very detailed in her instruction without being verbose or tedious.(unlike Madelene Kamen who drew a lot on her but, for me, mostly unreadable) I now also own copies of Curnonski and Pelleprat so let's see what comes of that, though they do seem a little Escoffieresque!

      @@Petespans I am proud of you! Curmonski on the road in France is just what you need to get the “juices flowing” so to speak! Have fun with it! Remember, or as you shall find out, he had regarded all forms of French cooking. Being on the road you can come up with all kinds of ideas from him.

    Beautiful as ever, but may I ask you where the location is.. somewhere in the South West? I have cooked poulet chasseur many times but not following Madam St Ange’s instructions; like you I will follow the instructions to the letter!

      It was just outside Foix, at the foot of the Pyrenees. A village called Celles in the Ariège.
