Respectfully, many will recognize these ingredients and assume you were referring to processed oils, especially as you used the processed counterpart as an image for the list. Also there's a lot of misleading information out there and no one really knows for sure what fats are healthy, especially as it probably depends on various factors such as genes. One thing that's healthy for me could be detrimental for your health. Sadly no one knows for sure. Regardless, I appreciate the video and the open discussion on such a controversial subject.

This video was incredibly informative and useful. But "best and typically most natural state" can be ambiguous. For example, I'm guessing canola oil was presented in its refined state (I've never heard of cold-pressed canola and the numbers seem to match up), but this wasn't explicitly mentioned. Specifying virgin vs refined would've been perfect.

Fats are essential like DHA and EPA and DPA and also your Heart is working on monounsaturated fats, but oils and isolated fats are not a health food, firstly they decrease blood and oxygen containt in it, and also they can oxidize and change really easy in Oxidants like AGE‘s and trans fats, because there is no fiber separating from the air besides them and oxygen is an extrem strong oxidizer, not to forget that heat catalyse this process enorm.
Unroasted nuts contain 5000 AGEs per 100g roasted nuts 9000 while olive oils contains 11000 AGE‘s per 100g and Sesam oil and Butter contain more then 20.000 AGE‘s per 100g.
The only options for fats are unprocessed nuts and of course low in saturated fats because they are cell toxic and block the sugar metabolism and increases your risk of CVD.
Walnuts in combination with Haselnuts are the best choice.

Something interesting/unfortunate about palm oil is that it actually naturally contains a much higher vitamin content when first harvested, but the vitamins cause the oil to be colored orange so they're removed and bleached from the oil before selling it in order to fit usual consumer expectations. If most consumers preferred the healthier, less processed version of palm oil, the producers could actually just skip that processing step to make what I would consider a superior product.

So what was I supposed to do? Say after every oil that refinement matters and then not be able to actually tell people how to find evidence of refinement because it is incredibly inconsistent from place to place? • @mrgalaxy396
      @mrgalaxy396 ปีที่แล้ว +3

An easy heuristic is not to go crazy on fat content, use minimally processed plant-based oils and fish oils, moderate your intake of animal fat and avoid the trans fats like the pleague.
Unless you're trying to heavily optimize for some condition or fitness goal, this should do. Wild caught salmon and sardines for that omega 3s, extra virgin olive oil is a fairly safe dressing and cooking choice (avoid deep frying in general), animal fat is a mixed bag depending on your sources but some pasture raised chicken (eggs included) and the ocassional grass fed beef should be fine. Pork is okay too again depending on your sources, the healthier the animal was fed and lived the better for you.
Butter/ghee is a good favoring tool in small amounts, I like to add a small knob of butter in my olive oil to add flavor. Nut butters are good for snacks in smaller amounts, make sure they are well made and not processed sugar bombs. I don't use seed oils much other than sunflower seed, but I find sunflower oil is a totally ok option in cooking and dressings in moderation.
Best to not overthink it and not overdo it.

I appreciate the video and agree with your ranking. My caution to anyone who is purchasing a new oil as a result of this video is that oils are some of the most intentionally adulterated substances available on the market so be careful when making your purchases. Often a more expensive oil will be cut with a less expensive (and less healthy) oil to make a higher degree of profit, and unfortunately short of a lab analysis it is almost impossible to tell adulterated oil from not.
Personally we cook with Avocado oil and Ghee, and use Olive oil in low-temperature applications. As time goes on I am skewing more towards Ghee as you can make it yourself from a known source and it has a Higher smoke point than a lot of other animal fats making it ideal for cooking. I avoid Seed oils in general because of adulteration, inflammation issues, and some of the ethical issues in sourcing them.

Also exposure to light and being inside your body further causes it to go rancid and can turn into carcinogenic chemicals. Does this sound reasonable to you? This video is terrible because it lumps all livestock products together without considering how they are fed/managed What livestock eat and how they eat it changes the nutritional quality and fat profiles of the livestock products.
Livestock that is MOB-GRAZED on DIVERSE/WEEDY PASTURE have saturated, monounsaturated and polyunsaturated fat profiles in ratios SIMILAR TO OLIVE OIL, with increased nutrition in: phytonutrients-terpenoids, phenols, carotenoids, and anti-oxidants, omega 3 fatty acids and conjugated linoleic acid. Grazing livestock on plant-species diverse pastures adds more and broader amounts of phytochemicals in meat, eggs and milk compared to grazing monoculture pastures, while phytochemicals are further reduced or gone in meat, milk and eggs of grain-fed or grain-finished animals.
When you add mob-grazing to diverse pasture grazing --the livestock eat more diversity in foods, and less empty calorie filler, while avoiding overgrazing.
Other benefits to mob grazing on diverse pasture means:
Mob grazing avoids the pitfalls of overgrazing because it means much less time for pastures to recover because the roots are able to recover as well. This means much more overall feed for livestock in the future.
It avoids the expense of hauling and storing grain as well.
Mob grazing means livestock gain weight faster and need fewer medical interventions such as deworming (mob grazing is a subgroup of rotational grazing well known to avoid worm infestation/reinfestation). So less food to fatten, but also more livestock feed is produced.
The animals have a healthier diet with more overall nutrients.
Soil quality improves, as well as more carbon is sequestered by both plants and soil biota, as well as a lower association with synthetic chemical nitrogen fertilizer, and the greenhouse gases associated with commercial nitrogen manufacture.
Avoiding overgrazing- this means mob grazed livestock produce less methane as they are needing less bacteria that specialize in digesting the 'straw' portion of grasses as they are instead eating the leader portions of grass.
There is improved water sequestration because water seeps quicker into land covered with living plants. It runs across the surface on bare ground.
    It reclaims poor land.
Livestock can be used to naturally manage pests, weeds and soil fertility.
Diverse pasture naturally rebuilds soil fertility., friability, humus.
It should be noted that poultry will need supplementation if on pasture, but they will benefit greatly from the increased choice in from access to a diverse pasture.
Researchgate is a great source and is cited in one of the videos from my YT nutrition playlists.

@@lindsaywickstrom9961 For example just yesterday this was published (can't post link, google the name):
"High fried food consumption impacts anxiety and depression due to lipid metabolism disturbance and neuroinflammation"
"We demonstrated that long-term exposure to acrylamide induces anxiety- and depressive-like behaviors via oxidative stress-mediated neuroinflammation, and unravel the underlying mechanism that PPAR signaling pathway mediates acrylamide-induced lipid metabolism disorder in brain."
The study is about ACRYLAMIDE which is a toxic byproduct from mainly frying plant-based foods, such as potatoes:
"Acrylamide is a substance that forms through a natural chemical reaction between sugars and asparagine, an amino acid, IN PLANT-BASED FOODS - including POTATO and CEREAL-GRAIN-based foods."
And here we can see how different fats used in cooking produce acrylamide (google the study):
"Acrylamide formation in vegetable oils and animal fats during heat treatment"
"A direct correlation was observed between oxidation values and acrylamide formation in different cooking oils. Significantly less acrylamide was produced in saturated animal fat than in unsaturated cooking oil, with 366ng/g in lard and 211ng/g in ghee versus 2447ng/g in soy oil, followed by palm olein with 1442ng/g."
As we've always known, animal fats are the most resistant to oxidation. Least acrylamide produced when cooking with animal fats.

Top tier: EV olive oil, coconut oil, avocado oil, beef tallow, butter, ghee.
    F tier: everything else.
I started following Dr. Ekberg and he really makes order of the conflicting information out there.
I was 116kg exactly a month ago and thanks to Dr. Ekberg I am now 106kg and feel better than ever.

extra virgin olive oil, coconut oil (pure form), naturally obtained butter and ghee are the only things you should use in cooking imo
seed oils have to be the absolute worst part of people’s diets, and I say this coming from a country with extensive household use of sesame, canola and vegetable oils

The benefit of living in a place like rural sicily is great, because we get tons of fresh & genuinely great extravirgin olive oil with sunflower oil as backup just in case. Thanks for the video, I wasnt even aware of this kinda stuff before your channel.

@Fruity - Not to rain on your parade, but the Food & Drug Agency in the USA has found that many olive oils from Italy are tampered with and may not contain much olive oil at all. Use caution. Buy from small family producers that you trust.
