I tried channa masala came okay but poori sothapiduchu. It became hard and tastes like pani poori in edges. Did same way as prescribed.. I think curd should not be mixed

I want to make a bhature with all purpose flower, and when I roll it with a rolling pin, rough circle about 6” diameter, it gets shrink in size (to 4”) when I am about to put it in oil. What am I doing wrong? Thanks.
