As I said in the past, the previous one looked more like a parody you'd see in "Gumball." This current design, however, works well because it looks like a legitimate new interpretation of Toucan Sam. The extra colors on his beak are also a nice touch.

Because marketing is everything for brands with mascots. If you destroy your mascot like froot loops did, it'll hurt the bottom line cause the product won't be as appealing to customers anymore. So they changed it and made Sam look more like his classic self so they would retain brand recognition and wouldn't be affected by consumer backlash
I dont know about you, but I actually enjoy the current wave of minimalist logos. Feel that brands have gone over the top with their logos these past years (most of the 2000-2010s), nice to see things being shaken up a bit

Personally I am fine with Sam as long as he has his catchphrase and personality. That was something I admired about the 2020-2021 commercial that wasn't in the 2016-2019 ones. This commercial should appeal to everyone at least.
Sam seems to be the only mascot that's been changed, strange as it sounds. Meanwhile Tony the Tiger, the Cocoa Puffs bird even the Cinnamon Toast Crunch character has remained the same for some time. Sadly, the Cravings Critter has been stricken from the record where Honey Comb is concerned

There was a brief period of time around 2015 where Lucky the Leprechaun from Lucky Charms got oversimplified. So no, Toucan Sam isn't the only victim.
