Great tutorial! I've been making enchiladas for maybe 60 years. I've found when making them for a crowd, or just myself, tossing the cheese, onions, and olives in a bowl till evenly mixed first cuts the labor time. Any meat can be added from a second bowl so it is only inside the enchilada and not on top.
I love, love, love your show and your enchiladas! Here in Texas we eat cheese and onion with queso or chili poured over them nstead of the red sauce. My husband can't stand anything hot. Keep up the good cooking! I like your ladle too.
I always add some chicken or rice even ground beef...my husband wants meat in his..I like mild so I watch my sesoning not to much...I always put a spray on the bottom of the pan and a dab of sauce on the bottom also..then line them up in the pan..and I totally cover them in sauce...
They look great. I like cheese enchiladas the best. A restaurant near me that has since closed used to make the best ones. I never got their recipe, but I think they used lard and bacon grease to soften their tortillas. Will try yours. I have been trying to duplicate their recipe ever since they closed during covid.
I'm not a gringa, but I am of Mexican descent, and we've always made our red enchiladas like this and with shredded chicken. Yes, we dip the fried corn tortillas in the sauce first, then all all ingredients. Finish by pouring sauce over all and add lots of cheese on top, too. The best!
You shouldn't use olive oil. Smoke point is 310 degrees. Oil turns bad for you. Olive oil should only be used warm or cold for salad dressings. Avocado oil has higher smoke point.
Gringo is a derogatory term describing white people... Living in CA all my life around southern americans, I've heard it almost 60 years. It's not a nice thing to refer to people as. Shocked to see this in a title.
Why didn't you add shredded chicken, it would have been tastier. I guess that some people would make them how they like them, but a meatless enchilada is like a sin, lol. Enjoyed your video but not the recipe.
Thanks for the comment. Enchiladas is one of those things that we fill with whatever we have on hand - cheese, chicken or thanksgiving turkey - with gravy and enchilada sauce mixed.

Thank you. I got the ladle set from Weight Watchers, they’re sized in 1/4 cup, 1/2 cup and 1 cup, so you can measure with them.
