After almost 30 yrs in Europe, I recently am rediscovering my heritage and culture and especially the food. You’re now my Mexican cooking mother and abuelita… I've become the only Mexican that serves this beautiful food while speaking French to my friends and new family here. Thank you for being there.
You literally put a tear in my eyes. I've not seen anyone else besides my dear mama make enchiladas this way...she's long passed. I've been to many restaurants hoping to find enchiladas made this way, but no luck. They all drown the enchiladas in sauce...thank you for sharing!😢

The best thing I have learned from this channel are the many variations of different salsas, enchiladas, burritos, tacos, etc. It gave me the freedom to put my own spin on these recipes, without fearing it might not be "authentic". My family thanks me, but really, we all thank you for sharing!
Absolutely, the next best way to serve enchiladas, pan fried. I do them for breakfast. I place the fried enchiladas on a bed of shredded cheese. As they are melting that cheese I fry up two eggs over easy then I place them on top of the enchiladas; sided with refried beans and fried potatoes, breakfast is served 🤠🇺🇸
I think learning how our grandparents prepared things is so important. We can learn so much about the culture. My grandmother did not enjoy cooking so there wasn't much to pass on but she gave me so much love that there isn't a void. Thank you for sharing.
The salsa was pretty interesting. One of the best salsa’s I ever had was made by a guy I worked with, when he made chicken tacos for lunch. He just put some tomatillos, onion, jalapeño, and garlic on a plate. Covered it with plastic wrap and microwaved them to cook and steam them at once. Then put them in a blender with some cilantro and a dash of salt. It was so good. He bought a rotisserie chicken from the grocery store, very succulent and perfect for tacos. That quick and simple meal was some of the best tacos I ever had.

This is essentially how I cook my enchiladas as well. My MIL taught me using ancho chilles; I now combine guajillo(?) and ancho. I also fry a diced potato/carrot mixture to put on the finished product, fried in the same skillet the enchiladas were fried in.
I love this version...I like to lightly toast my chilies first then just soak in boiled water, and also semi sweet chocolate added at the end makes the flavor so yummy and intense.Lovely demonstration of how to cook and fold the enchiladas, thanks for sharing!! I love the history and pics🤗.

Ever since I was a little girl, my mom would add ground beef as the filling and cheese as the topping. Then a friend of mine gave me a plate of hers with just cheese and onion and I was so shocked. My mom told me that the traditional enchiladas are only filled with cheese and onion. However, my moms family was so poor and couldn’t afford cheese so it was just onion and she grew to hate onions and stopped using them when she came to the US.

In the north of mexico, Zacatecas, Durango, Chihuahua, they fry the tortilla first and then dip it in the enchilada sauce after. The Chile rellenos in Durango never go with a salsa over them and use Poblano peppers all the time so a deviation from that is unusual to people from that region. Tamales are different in almost every state, sometimes from family to family. My aunt on my dad's side always made sweet tamales with pineapple, raisins, and coconut but my mom's side of the family didn't care for them or never made them. It's nice to have all of these different takes on the most of common Mexican dishes. I like all variations and like to try new ways and flavors, it's all good.

My mom makes the same enchiladas, only difference is, she uses parmesan cheese. These are actually my favorite.

Aww your abuelitos are so cute. I'm almost 30 and have only ever had one grandpa alive since I was born and to this day he is in 90s and is just about to have another birthday. Haven't seen him since this all started so watching you see yours made me tear up. Also these enchiladas looked amazing I think ill make them tonight for my family we had a tough weekend so they deserve something delicious
