I absolutely love Mythical Kitchen. Trevor's "accidents" are so endearing it makes the show so wholesome and inviting to try new recipes and just cook for the fun and love of it, whether or not you're an absolute accidental messy or a cleanasaurus.
Yummy! ok, I'm Peruvian and those "Tallarinas a la Huancaina" looked delicious! It should be mentioned that in Peru it is accompanied with juicy and super delicious meat loin, that is the original recipe, and it is made with canutto noodles or thick noodles, rarely with thin noodles, FACT in Peru they also make "Tallarines Verdes" and they are much greener because they are made with spinach and albahaca it gives it a super green color and they are eaten with meat too, there are places where the green noodles are made with another super famous sauce in Peru "Ocopa sauce" | Salsa de Ocopa is from arequipa another Andean city like Huancayo and his "huancaina".

My Italian grandmother would often make spaghetti with ketchup. That was when I learned that when you are poor, you make do with what you have at hand. I never complained. I always thought her cooking was delicious, no matter what she made and how she made it. She made the best homemade gnocchi. I miss my grandma.

Uuugh, espagueti verde is a classic dish for a Mexican Christmas dinner. We always prepare mashed potatoes, espagueti verde and, pollo horneado (which is just a baked chicken which we fill with more potato) and ensalada de coditos (they're c-shaped noodles in a mayonnaise, cream and sugar mixture paired with chopped apple). Man, i want it to be Christmas again....
Im peruvian and i looove tallarines a la huancaina. another dish you can try is sopa seca since Josh mentioned he liked the stir frying of the noodle which infused all the sauce. Sopa seca translates to dry soup in which you let all the broth and sauce soak up into the noodles as it cooks and leaves no liquid as its all infused in the noodles hence the name: dry soup. usually accompanied with carapulcra, a dish made with dried potato.
For anyone that's on the fence about trying one of these I just made the one with pablano peppers and it truly is amazing! I ended up using 4 peppers instead of 3 for a little more pablano flavor. Do your mouth a favor a try it!

Non dairy cream cheese is available in most grocery stores. There are like 5 main options to pick your favorite. Non dairy milk is everywhere. The Mexican cheese is the only one you can't directly replace, but there is a Non dairy Feta. The flavor is Non specific enough it could pass.
I’m sure y’all are already working on it, but you should come out with mythical kitchen cookbooks. One for each series (snack smash, foods from different countries, fancy fast foods, etc.). You could sell them individually as well as in different collections.
Hopefully one day the Kitchen of Myths could make my favorite Japanese dish; Taco Rice... oh and Trevor you can get the peppers here in Cali, we call them Rocoto or Manzano peppers, they might be a little different but its gonna be the closest youll find

You should try green onion spaghetti, it has lots of oil and TONS of green onions. It's dry fried until the noodles get little crispy bits on them.
