"that nasty thing" is called a Wattle when it's under the chin. Turkeys have one dangling off the nose called a Snood. All the different 'nasty things' have fun names.
All the loose fleshy structures on birds heads are for thermoregulation, they help cool the bird down.
Other birds without 'nasty things' have odd behaviours and adaptations for keeping cool. Vultures have bald heads and necks that they can extend or shrink right into their body, while Pelicans can stick their spine outside of their mouth and it's super creepy.
Nathan might be interested to know that there is a lot of speculation that some dinosaurs might have had wattles and snoods, which I think would make an excellent inclusion to his 'Big Book Of Dinosaur Lies"

I've suggested this before, but I really wanna see you guys draw dragons that hoard specific things other than treasure, such as pillows, cookware, plushies, action figures, etc. And the dragon's design/appearance is in some way related to the thing that they hoard.

Chickens find other chickens more attractive when the Crest is more boldly colored. Related to the blood flow thing as mentioned, the paler it is the more it indicates the possibility of poor health. They also prefer the Crest to be bigger in size.

As a roosterologist the “nasty things” are called the comb and wattles (comb on the head, wattles under the chin) and you were right, they exist specifically to annoy Jacob.
(They also have *minor* use in thermoregulation where they can pump full of blood to cool them down, and they can be used in sexual and health display because the ladies like a big healthy comb on a rooster.)
When in doubt about a giant, seemingly useless animal part, it's probably for sexual display.

I’m not a roosterologist but I am an avian ecologist, and the gross flap of skin on a rooster is used for heat exchange and mating displays
