    Instead of sodium nitrate to cure the meat, you can put the jerky in a pre-heated 275 degree oven for about 10 minutes after drying, that will kill any bugs that might survive the drying process (which is sometimes not quite hot enough to kill bacteria).

      We need bacteria to live our body's live off bacteria. Curing meat creates more bacteria like b12. Salt and chilli cure meat to help shelf life.

      Nitrates are cancerinogenic, you don't want them.

      @@Stellar-Cowboy Little willie is confused. Celery, lettuce, kale and rhubarb ALL have nitrates, as do tomato products. There is NO proof, only speculation, that nitrates and nitrites can contribute to cancers of the digestive system. BTW, there's no such word as "cancerinogenic", I suspect he meant carcinogenic.

    Still the best, most economical dehydrator on the market. Ive had mine 15 years or so and it still works great. I do strongly recommend putting the finished jerky in the oven at 275 for 10 mins after drying. It will get rid of any shiny fat and ensure that your jerky is bacteria free.

      Richard Starkweather yeah we have always done it and it’s the best way to do beef jerky but do note it’s the dry kind obviously which is my favorite when i think of beef jerky I think of dry meat but of course most that you buy is the opposite

      I let my beef sit in kraft hickory BBQ sauce, and add some pepper, let is sit in a small bowl so the BBQ sauce can cover it easily, and let it sit 24 hours, or two days if you have patience. (And let it sit in the fridge.) lol

    My wife bought this bottle locally, but I just looked it up on Amazon. They've got a 2-pack for $13 before shipping (or free with Prime). It's called Floyd & Fred's Hot Lime Habanero Pepper Sauce. Fair warning: it's a lot closer to lime "juice" than sauce, even when taking into consideration that most hot sauces are pretty thin to begin with; this stuff is nearly water-like in its consistency (but packed with flavor). It's still wonderful and works well with fish and Asian dishes especially.

    Trust me; it's an excellent appliance that comes in handy a lot! We use our mostly for preparing snacks and jerky for hiking and camping trips, but it's great for any time, really. It can be a life-saver for rescuing overly ripe fruit from the trash can; even when bananas, strawberries, apples (and more) get kinda soft, you can dry them out and they taste the same as when dried from fresh. Making up your own jerky flavors never gets old, either. Thanks for watching, RPM!

    When I make my jerky, I basically do it as the video. What I do is take the jerky off the paper towel after they are blotted dry, I then wrap them in an old wet towel and let it sit overnight. The jerky then comes out a little softer and chewier for us old folk to enjoy.

    I havent made beef jerky in a long tine. I refound my Nesco 'Snackmaster' jerky maker in the garage. I decided to toss a batch in. I like mine thicker though.

    We got a dehydrator not to long ago and made the mistake of cutting our meat against tte grain, making it hard. Always cut with the grain. Makes a great snack

    I use zip lock bags and squish out the air so all pieces are thoroughly in the liquid. In my house, this would be gone by end of day. We’re making 13 pounds of round which will yield about 3-4 pounds. We’re doing a few different batches for family.

      I had the model before the one you’re using. I had it for 20 years and last year I threw it out because the trays were breaking. Plus, I couldn’t change the temp.

I just got my own Nesco Dehydrator and Jerky has been one of my dreams to make at home (love it, kids usually eat it up too fast) and I was kinda intimidated by the instruction manual. One question: I often read recommendations for pre-cooking the meats for the jerky. Have you found this is necessary when working with anything but those thin strips? Or with chicken/pork/etc?       +Crystal Gerhart I unfortunately don't have any experience with thicker cuts. I have also read folks' advice about pecking some meats, especially pork. It's ! my understanding this had to do with preventing spillage or bacteria growth before the meat is dried properly. However, even without any first hand experience, I would say that for thicker cuts, it probably would be a good idea to precook the meat, at least to medium rare, before drying, to give the meat a fighting chance before spoilage sets in. Sorry I couldn't be of more help.

      I find that if you add. Course black pepper on it and during the marinading process add soy , Worcestershire sauces and a little hot sauce, your jerky has more flavor.

    Good video do you have to heat the jerky in the oven to kill bacteria, I've heard you can get sick if you dont heat the meat at some point.

    I put mine in my nesco garden master for 8 hours @ 160 fahrenheit and use a jerky gun it comes out great. You can bend it one way then the other and it breaks off which is how I like it.

    Also my first batch was a disaster. Way too much liquid. It was over flowing all over the counter, dripping throw the racks. such a mess. yours looks perfect. why? Anyway, now I seal it in the oven first at 260 to 220 for 1 hour. This first hour is when most the moisture comes off. I use a sheet pan and at 30 min. drain and turn pcs over. then at 60 mins move to oiled necco dehydrator trays....dry sides down. No more mess. I saw you go right from the marinade container to the trays, then out...like magic. wonder if anyone else has too much juice that way like I did? Happy dehydrating!

    I've never made beef jerky myself but I got a pro-tip for marinating. Just use a ziplock bag. Squeeze all the air out of it so it's just meat and marinade. Anyways, I couldn't find any specific jerky cure product in Ireland so I just ordered some potassium nitrate that I will mix with my fixings. Wish me luck.

      I think you are going to want sodium nitrate but I think potassium nitrate is also used as food preservative... I would be careful of how u use it in your recipe. as in it might not be in the same quantities as sodium nitrate... I am just making my first batch of jerky so maybe someone else will chime in.

    Add some Habenaro pepper flakes. My father in law dehydrates his own peppers, and then busts them up into flakes in a food processor. Packs quite a wallop on the jersey we make, lol.

      looks like victornox fibrox knife... could be wrong but I think so, I just done a lot of research on kitchen knives as a gift for my mother, who has never had a decent set of kitchen knives. The Victornox set is pretty good from what I learned....(but they are stamped)
      I ended up going with a forged set from Mercer Culinary... its forged from the same german stainless steel as fancy Wustoff knives, they are just made in taiwan.
      The Mercer ones are super sharp.

    I like my jerky to be cut across the grain to make it easier to eat. And I like it so dry that it snaps in two. The drier it is, the longer it will last. Plus, after I dry it I place the food grade desiccant pack in the bag and vacuum seal it. Lasts a long long time. I e got some jerky that’s been in a vacuum state for over ten years. I broke open one of the many bags of it and it’s still fresh. I give it another four to six years and I’ll be starting to use it up, replacing it with new.

      im gonna wash the jerky in some double distilled petrol ether to wash the fat out and then store in in a timecapsule lolol

    Great video! What to do in case i want to put a whole steak inside, like a 1 inch and a half thick steak.
    I know it may not fit due to clearance but what if i cut some of the plastic lines on one of the trays so it will be deeper and fit bigger pieces of meat. Prosciutto type.

      It will most likely rot before it dries out enough, depending on what you soaked it in.Many of the over the counter cures have all the nitrates and bisulfites in them so people don't kill themselves!

    I have never seen the inside of a electric dehydrator. Is the element covered in the ones with a bottom element and fan? The top element ones make more sense then.

      Yes you can, but no need.
      Once the meat is dehydrated, it's preserved and only needs to be protected against moisture.
      Personally I keep my jerky/biltong in a plastic container with lid and it can stay there for months.

      Dehydration is the cooking process. The point of cooking is not to just add flavor but to kill bacteria. By dehydrating the meat you kill any bacteria that could have lived in there.

      you can actually just eat the meat without killing bacteria... your stomach has bacteria to do all that work, if you have a decent immune system. Also yummy to dip raw meats into soysauce and ginger :D as the japanese man would say... "dehydrator? whassat?"

    Hah, I came to this video because I originally read the title as "Making Beef Jerkey Without a Dehydrator". The thumbnail looked like you had laid out your jerky strips on a big fan and dried it that way. lol

    Okay so, does the dehydrator also cook the meat? I’m confused on how it works. Does it need to be cooked at all or does the drying make it okay?

      No cooking required. The drying process along with the salt (or nitrates) cures the meat and makes it safe to eat.

    I purchased a dehydrator from Amazon along with the jerky seasoning. When I started to check out I was asked if I wanted to apply for a credit card through them to save $70. The end result I only paid $17 for the dehydrator after tax. $30 including everything

    i vacuum pack my jerky in marinade for two to three days in the frig

    best Beef Jerky I EVER had was sold at Cub Foods in Colorado (back 25 years ago when they still existed) I remember our family would practically clear the shelf when jerky appeared on it. IDK what they did but for the next 25 years after they closed down; I am still yet to see better made jerky than they would put out. I cant believe that kind of jerky seemed to go extinct, I would have thought it would be made like that commonly; BUT NO! (god dammit)

    It really depends on the flavor for me; I love Spitz Dill Pickle and Seasoned but BIGS has Sizzlin' Bacon and Jim Beam BBQ (which is mind-blowingly good!). I'm sorry, but I'm not sure where in Canada you can find BIGS. I would try looking online if you can't find them locally. Good luck -- I hope you get a chance to try them!

    I really would love to make jerky, but for the marinade I want to drench it in pineapple juice. Would probably go really well with pork
