    Glad to see the egg bath and the cuts, gives it a real French look. When my prents made the bread every month when I was a child, lots of bread didn't make it to cooling, the family all had their favorites treats, mine was getting a nice steaming fresh pieces then lay it with molasses, lots of it that soaked deep down in the bread, waited a bit then butter the top nice, and grab a glass of cold milk, and have a foodie experience.

    As a professional baker I have one tip angle your knife at 1:00-7:00 with a super sharp knife so the bread doesn’t pull and you will be amazed at how beautiful it makes it. I live at sea level and it is humid here. It took several tries but I finally got great results. I used your recipe except I add 1 egg. I let the yeast proof for at least 10 minutes. I let the bread rise long enough to triple in size, and then I proof the loaves for at least an hour. Adding the egg created an unbelievable amount of rise, and it seems to make the crust a little crispier.
    We’ve also experimented with adding a tiny bit (less than a teaspoon) of apple cider vinegar to the dough - seems to give it more of a fermented taste.
    Thanks a lot of posting this video. I’ve never had any luck making bread, and you inspired me to make it happen

    I have finely mastered this bread.
    I use honey unfiltered and raw instead of sugar and I use 2 teaspoons of salt the other was to salty for me.
    But I made some last week and some this week and it's so yummy I'll never buy store bread again that I know of .
    I put my in a 9by 12 cake pan and it comes out huge loaf plus big enough for a sandwich one slice.
    Thank you so much for sharing I put my bread picture on my FB and people want the recipe so I shared with everyone that asked.
    It's so moist frenchy and spongy and flakey best bread I have made.
    I love white bread and the stake rye is one of my favorites along with sourdough bread and Italian.
    See big bread eater here I was raised on home made bread all my life when at my grandma's if you get a rye bread recipe please do one on it I'll be so glad.
    Take care.

    I see mention of baking stones. I got mine custom cut years ago at a website that also provides pizzarias called bakingstone. They come in 1/2" and 5/8" thick. They do carry standard sizes. Mine is 5/8" and works perfectly. If you plan to make pizza, you need a thick stone to hold enough heat to give you a great crust. Do'nt forget to let the stone recover between pizzas.

    I was always taught that your liquid should be “body temp” to be perfect to develop/activate the yeast without killing it.😉 I LOVE making homemade bread. I’m lazy though so I use my Kitchaide with a dough hook. Another tip that works for me is if you kitchen is too cold to proof; put a mug of water in your microwave for a min or 2, push it to the back & now you have a warm moist enclosed area to proof!🤘🏻

    • @cjennmom
      @cjennmom 5 ปีที่แล้ว +3

      The best temp. to proof yeast is 105-115 F. I try to aim for 110 to be safe. It works great since I got an infrared thermometer for my soaping, it's the same deal - point, click, read. :)

    • @vegangelist
      @vegangelist 3 ปีที่แล้ว

      I concur that 105-115 is the right temp for the water in this recipe, because you are proofing the yeast by adding it directly to liquid.
      If you are mixing the yeast with dry ingredients and then adding water, you can go up in temp to about 115-125.

      I don't agree with you. First of all the lady looks very unhappy or may be forced to do the role in the vedio. Second SHE was the one who did everything and his role was only (the sound affects) which sounded very fake. Above all the title of the vedio doesn't match the prosedur ( concerning the time mentioned just to attract the people interested in preparing bread dough ).
      And concerning compliments, I think she deserves something more valuable than that Simply because it was all done by her. And calling her queen of yeast is not a compliment infact it is an insult .

I think maybe you are reflecting many of your personal feelings to the lady in the video. I couldn't understand what she said when he made the queen of the yeast remark but do feel that she didn't like it, but I didn't gather any impression from her or anything else that she possibly was being forced into bread baking servitude. it's 2 years late so this is for those still looking for an answer in the future (cool huh? Speaking to the future!)
      I'm no expert but there are a few reasons I can think offhand. You may need a warmer raising environment. I heat a cup of water 5 min on high in my microwave then use the microwave as my warm environment. Not too hot not too cold. The other thing is, instant yeast requires hotter water than active dry yeast: 120F.
      Whereas, active requires about 80-85F I believe. Check the yeast company 's website when in doubt. For active dry yeast, I run tap water until it just feels hot then catch it in my measuring cup.
      Big thanks out for the tutorial. As usual there's always something to learn. 30 cents is very impressive and whoa nelly, I thought I was supposed to knead it with elbow grease! That explains a lot ;-) thanks

    Okay. So I just watched this but mixed in my old school Goodwill store bought Regal Bread Machine. It mixed and kneaded maybe 10-15 mins? I yanked the dough out and put into a bowl covered with oil and I covered it and let it rise double and then I rolled it out like you did and cut it in half lengthwise and then rolled it up and put it on the pan... covered it with a warm wet paper towel rung out and then after rising again...baked it. OMG... Vegetable soup fresh French bread on a cold snowy day and butter oh I am filthy Rich today thank you for putting this out it kind of gave me that confidence to at least try it! I've never made french bread before and it was wonderful! Felt a little guilty because it was little to no effort!!!

    These came out to be Italian bread instead of French bread because of the time you didn't take kneading and sizing. The difference between French bread and Italian bread is how bready or thick the inside is. Ok new at this, can I just activate my yeast in my kitchenAid mixer, with dough hook in mix this all up to incorporate it, then I just kneed it for a few minutes on what speed medium and then let rise?

    • @MissWinkle555
      @MissWinkle555 4 ปีที่แล้ว +1

      I use a my KitchenAid for a similar recipe. Activate yeast, then it's easier if you use your whisk attachment for the first half of the flour, then switch to the dough hook for the 2nd half. I gradually add the 2nd half of flour and mix it the most with when it's stickier because my bowl doesn't stay locked once the dough gets thicker (it's fairly new but I don't think KitchenAid mixers are great for dough, mine started having issues early on and it seems to do better with smaller/thinner batches ). Then you can let it rise in the bowl you mixed it in. Sorry to be so long winded lol 🙂

      I should think so. After all, what are rolls other than mini loaves of bread, right?
      But be careful to monitor the cooking times as the smaller "loaves" will likely cook MUCH faster since they have more surface area for their size than a larger loaf and will cook faster.
      Another thing I might try is to add in some grated cheese and tiny diced bits of jalapeno peppers that have been patted dry to remove excess moisture.
      It should (?) turn out to be a Cheesy Hot loaf that would go great with any Mexican meal instead of tortillas. Something like a Mexican chicken and rice meal.
      Yummy. I'm getting hungry just thinking about it. LOL
