    RECIPE DESCRIPTION:
    Ingredients
    Cashew nuts 1 1⁄2 Cup (24 tbs)
    Almonds 1 1⁄2 Cup (24 tbs)
    Sugar 1 3⁄4 Cup (28 tbs)
    Cardamom powder 1 1⁄2 Teaspoon
    Kesar 1 Pinch
    Milk 1⁄4 Cup (4 tbs)
    Directions
    GETTING READY
    1. In a dry blender, add the cashew nuts and almonds and blend together into a powder.
    2. Using a sieve, sift the flour into a large mixing bowl until an even and fine consistency of powder is achieved.
    3. Preheat the oven at 350 degrees F.
    MAKING
    4. For the Kaju badam puri: Take the kaju badam dry powder, add sugar, cardamom powder, kesar mix well.
    5. To make the dough, add milk 2 tablespoon at a time and mix until well combined into a cookie dough. Make sure there are no cracks in the dough.
    6. Take two sheets of wax paper and place this dough in between the sheets on a wooden board and using a rolling pin, roll out the dough to form a quarter inch thick flat dough.
    7. Remove the dough from the sheets and place it on the wooden board, then using any shape cookie cutter, make cookie shapes from the dough and place them neatly on a baking tray about 1 inch apart.
    8. Bake this in the oven at 350 degrees F for 12 - 15 minutes or until done.
    SERVING
    9. Serve these kaju badam puris or cookies with warm milk or tea.

    Made these today only with badam. Turned out awesome. I didnt remove the skin of almonds so the color was a bit dark. But thats okay. I baked them for 8 mins. should have baked them for 5 mins only and used a wax paper on the baking sheet for easy removal. Thank you for the recipe. Keep posting new ones

    Kunjal Vikami made and shared that these cookies come out awesome. Not sure how it turned out chewy. They do get brown pretty fast so you have to be very careful. These cookies need to be baked very lightly. My second batch was good but yes, first batch got little over baked.

    Yes Bhavna I tried a mud pot with greased idli plates inside and it worked! The cookies came out well only thing it was time consuming and needed attention every now and then to make sure cookies didn't get burnt. Also a micrwave would be less time consuming and more economical than a gas stove top and energy saving ofcourse!

    Thanks for your recepy,I made it with only Almonds and my Oven is new so I reduce baking time to only 10 minutes and it turn out really great and kids called it Almond cookies.Thanks again for sharing.

    Yes, same as shown in video but instead of regular bake option, use convection bake option and keep an eye on it.

    Baking time always depend on oven so if they cake out fine then you can keep baking for 8 min but I always bake them lightly.

    Nice, I'm gonna do the same with walnuts. I have a lot of them left. I,ll do walnuts and almonds. Basically any nut can be used so this is an awesome recipe to use up bulk nuts.

    I love this recipe and can't wait to try it out. My only question is - when you say 1 cup of almonds/cashews - do you mean one cup of whole nuts or the cut ones?

    And I have one more tip for you....if the kaju badam mixture gets too greasy because of excess milk you can use dry roasted rava (semolina) to set the mix straight...it gives a crispy outer finish to the cookies.......this was my experience!

      Take little over 1/2 cup of nut powder for a cup of whole nuts

    I made these exactly per your receipe........ i think the texture is completely different from the traditional badam puri you get in India. Not at all like badam puri, more like a hard chewy cookie...... maybe needs a little leavening and / or shortening? Also the color of the cookie you show at the end of the video. It wasn't at all uniform like that. It was pretty brown on the bottom side and very very white on the top. Appreciate if you provide more accurate results and feedback in future.

    Bhavanayen I made badam puri . But I did not grind I churn in electric nut grinder.
    I did same you explain but it did not became like your . When cold it gets break I could not keep in my jeans what is mistake.?

      +nirali doshi if baked properly, can have up to a month of shelf life or refrigerate for longer freshness

    Mine turned out good in taste but was over baked and chewy like a cookie not like traditional badam puri u get in Mumbai. Can you please reply what could have gone wrong or is it suppose to be chewy and hard like a cookie??

    They were burnt Bhavna need to place them between baking sheets or parchment paper and bake

      +Rashmi Momaya you can soak overnight or boil and it will make easier to peel the skin, then you can sun dry again if not using immediately

    My mother used to make it on gas with wax paper . Next day we took paper very sloly to just used little milk in finger and complete paper come out .
    Now I am trying but it did not became proper.
