The last time I visited Bicol was 22 years ago. In my opinion Bicolanos are the best in cooking dinuguan or any food with coconut milk. My favorite is Laing 😊

The thing which you mentioned and described, fish that is being cut in half, not all the way and dried is what we call Daing in Tagalog and Uga meaning, dried under the Sun by means of preserving it, Dinuguan is the name of the Blood stew, with Pig innards, and meat and Pig blood that goes with the stew. Actually, its delicious and addicting as long as you get used to eating it, it is usually eaten alongside Filipino muffin called Puto. You mentioned Christmas, our Pinoy traditional dishes includes Queso de Bola (Rounded Cheese), Ham, Any kind of noodles whether it be Spaghetti or the local noodles, Sausages, Lechon and of course, whatever you put on the table. Christmas streetfoods are the famous Bibingka and Puto Bungbong!😋😋😋
Wait a minuite there are big houses in bicol ..Legaspi city,bicol they have very nice houses and big as well.Like in our province in Quezon Province when i was a kid We had 5 big bedrooms.There are lots of big houses and also 3 to 4 floors in the 60's ,especially now.

We call it Badi (the dried fish) in Bicol. And it's good.
