    It's really hard to believe that the lite whiskey was a year ago. Showing my age as time really flies.
    Some really great recipes. I wish I had the time to create as much product as you do.
    Looking forward to 2023's creations.

    I have a little air still as well. It gets more use than my big still. I can run a gallon at a time while I’m working on other things like fixing dinner. Run through my 5 gallon bucket of wash a gallon at a time, collect the low wines and then spend the time for a spirit run. I’ve got to stay on top of a spirit run, and on new products, I take like 50 ml cuts. Just to be safe. Once I have an idea of what to expect, I just take rolling cuts on product, taking cuts based on flavor. I also let it go all the way down. I collect my sweet water for proofing down as well. It carries sooo much better than just using distilled water.

    I sure did enjoy your videos all year you do a fine job you tell how you do it what ingredients how much ingredients I really enjoy it how about a caramel corn shine if anybody can do it you can
