    Nutritious pork bone broth noodles topped with melt-in-your-mouth char siu slices (Chinese barbecue pork). The pork bone broth was simmered for 6 hours, and we used pig knuckle instead of pork belly for the char siu.

    Now I understand why ramen is expensive in my country. They put a lot of effort and time to make every single part from chasiu, noodle, and the broth. Tq Chef

      However Ramen has one big advantage, you can prepare basically everything beforehand. It just takes a long time (if I make ramen for Friday I usually start on Tuesday so that every part gets the time it needs and deserves)

    I'm not a cooker and not very often cook at home, but I think this is another way to prepare Charsiu without using a roaster (so called Xa Xiu in Vietnam). I saw my mom did it this way, of course with lesser steps. The thing is its flavour, it's similar to the "REAL" Charsiu.
    I saw some comments below about Charsiu or not Charsiu, and some said it's braised pork. Yeah definitely it's literally braised pork but it's Charsiu too and this is the art of cooking. Like you can make a very yummy roasted pork by frying in it with right preparation (you can search on TH-cam for what I say), and if we are talking a bout crunchy roasted pork, they are 99% the same.
    So please show respect to this chef, he knows what braised one and what Charsiu one than anybody here, since he's a professional one 😀

    In my hometown, we make sweet pork knuckle soup. Ingredients are pork knuckle + water + sugar + ginger only, simmer for 2 hours on medium fire, you will have the delicacy ready. Try to make it, you will not regret the time you spend.

    There is char sui in the chinese restaurant then char sui from John the chef. If i ever won the euro millions and i would pay a lot of money for chef John to cook for me at least once a month. Where ever he may be in the world i would travel and let him choose whatever he can be bothered cooking. This man is a talent beyond imagination. A true artist.

    Is there a way for you guys to show us what wok you guys prefer. Because I keep looking online and it says most prefer carbon steel wok but you guys seem to be using non-stick or preseasoned wok? I would really like to use what you guys are using to cook these foods!!

    I think this recipe is more like the char siu in Japanese ramen than the roasted char siu of Cantonese

      Yeah...I've seen a lot of places in NYC sear the cut pork with a blowtorch. Definitely kicks up the flavor a notch. I like the fact that you can make both chashu and the tonkotsu broth from the pork knuckle. Very practical if you wanna make ramen at home.

    I was about to make this recipe but after 2 weeks I haven't found cooking wine

      Any Asian grocery store should have cooking wine, there is a lot of different brand and type, however, my personal favorite is the 'Shaoxing Wine'.
      If you really have trouble to find any cooking wine, rice wine can also do the job, just beware, rice wine is NOT rice wine vinegar, they are different.
