    메리 크리스마스! 지난주에 WSET 3 시험을 보고 왔습니다. 공부를 할수록 더 깊어지고 어려워지는게 와인인거 같은데, 선생님들과 의견을 나누고 내년 부터 멤버쉽을 통해 더 깊게 와인에 대해 공부 하고자 합니다.

    주정강화 와인 초보인 제 테이스팅 노트를 셰어하자면, 향에서는 특별함을 못느꼇는데, 와인을 삼킨 이후 10~20가지 정도의 복합적인 맛이 몇분동안 지속이 됐어요.. 정말 신기한 경험 이었습니다.

    Palo Cortado means, literally, "crossed sticks". Back in the days when winemakers were making fino sherry they used to mark the barrels with a more or less vertical stick like this "|" - a "palo". If the winemakers observed that the flor layer SPONTANEOUSLY died out, they would then cross the existing stick with an horizontal one "-", making a palo cortado "ⵜ". Spontaneously here means without intentionally fortifying the wine to a point to produce an "oloroso" or later on re-fortifying a fino sherry to make an "amontillado". After a barrel was identified as "palo cortado", its content could only be blended with other palo cordatos.
    By the way: V.O.R.S. stands for "vinum optimum rare signatum". This "very old and rare sherry" is just an unofficial version that is remarkably catchy :)

    최근에 Rutherglen에서 나온 Dry Flor Apera 와인을 마셔보고 Flor가 무슨 뜻인지 궁금해 아무리 검색을 해도 못 찾았던 기억이 있는데 피터와 패트릭 선생님 덕분에 알아가네요!

    레벨3에서 제일 열심히 보고 외운게 쉐리 였습니다. 주정강화와 스파클링 중 주관식 서술형중 한 그룹으로 무조건 나오고 쉐리가 그만큼 나올 부분이 많거든요. 근데....제일 접하기 힘들어서 제일 금방 까먹는데 지금 책찾아서 다시 보고 있어요...ㅎㅎ
    시음때도 저는 엄청 끌렸었는데 국내 로드샵에서 구하기가 힘드니 참...ㅎㅎ

    크으~ 구하기도 쉽지 않은 팔로 코르타도! 피노 셰리가 효모 Flor 숙성을 거치고 거기서 아몬티야도가 아닌 독특한 현상의 와인이 나오는데 그걸 팔로 코르타도라고 일컷고 피노와 올로로소 두 특성을 아몬티야도보다 더 완
