Coconut Rum. We have some of that at home! The coconut topping looks divine. Yes, more rum on the glaze. Brilliant. haha We only have the mini bundt molds so we'll just make tiny versions :-)

I love pineapple so much and Bundt pans too. I have this mini Bundt cavity pan that has six Baby Bundts. So stinkin' fun. They are a fun shape and the same here, sometimes getting the bake out cleanly is tough.
Awesome bundt cake! i have bought cake flour in the past, only for it to go to waste. Unless you are a serious baker, I think all purpose may be all that you need...I will may have to do a side by side comparison at some point, though. Nothing wrong with a lot of cherries and pineapple in the bottom of that pan. It helped to make it very colorful! Yes, definitely add the flour a little at a time. It's amazing how little liquid you need to make a powedered sugar glaze: it's good that all you need to do is add more powdered sugar if you added too much. That cake looks amazing! So colorful. I remember how much you liked the peach cake, so hearing that you liked this one a lot as well tells me that this is truly good. Thanks for sharing, Alicia!
Hi Parnell! I have used cake flour and bread flour in the past and it makes a little bit of a difference but not enough of one for me to want to buy several flours! You would think I would learn to mix stuff slowly so as to not get it everywhere but I still do it on occasion! Hi just wondering how many slices you would typically slice this into? I thought it was the best pineapple upside down cake I’ve ever had so moist and delicious I don’t agree with you however on it not being pretty or however you said that I thought it looked so good with that drizzle sadly though after putting this cake and all it’s ingredients in my recipe builder on the WW app it’s 26 sp 💙 for 1/16 size slice 😢😢😢 but I have no regrets making it just wish I could eat more of it, thanks for sharing your recipe
Hi Tamara, I sliced mine into fairly large slices I have to admit. I probably sliced mine into 8 pieces. It was definitely a cheat day thing for me so I wasn't worrying about the points but wow, that is a lot at 26sp for 1/16!! I'm feeling lucky that I didn't gain a bunch after that! Lol And thank you so much, I thought it was yummy. My hubby hates pineapple and ended up eating a bunch of it too so that must mean it was good!😂 I will most likely make this again for another special occasion but now that I know how many points it is I will probably eat less. RE: cake getting stuck in bundt pan: I always use butter to grease the pan. The heat from my fingertips softens it up, and then I manually work it into the interior until it's 100% visibly coated. Every cake I've made slides right out.

You have some true talent with baking you made a glaze out of alcohol ! lol you amaze me every time aww man you made something your husband doesn’t like ! Wow look 👀 how moist it is !!!
Thanks, I love my fake nails! Lol This cake takes longer to cook because it is so big and it is cooking at a little lower temp than the norm of 350. Thank you, I love using alcohol in baking, it is a lot of fun! My hubby did end up eating this after all.😁

Hi Alicia, When I made this cake, you didn't mention the size (in ounces or cups) of your cake pan. Mine was from 30 or 40 years ago, and as a result, I had enough leftover cake batter to fill half a loaf pan (which I was not going to throw out!). In your written instruction and verbal in the video, you only mention 1/4 cup rum and then you say in between adding flour, "add the rest of the rum" not did not mention what the measurement was of it. I guess I would have liked to know what the total amount was in the recipe should I make it again. I made this cake specifically for my only daughter's birthday today as pineapple and cocoanut is her favorite since she's experienced morning sickness with my first grandchild. Since she's bound to ask for the recipe, I wanted to get it accurate to pass onto her. Thank you for your recipe! I'll let you know everyone's feedback at dinner tonight.
I used a standard size bundt pan or 10-12 cup pan. Since it was a standard size and not a special size, I didn't think to mention the size but I will add that to the written instructions. Sorry about the confusion. As for the rum, I only used 1/4 cup rum total which I have in the written instructions and in the video. I talked about it in the video here 8:09 I try to be as clear as I can in my videos and written instructions, sorry for any confusion! I hope despite the problems, you enjoy it!
