- Kapampangan Sweet Skinless Longganisa
Longganisa is a Filipino breakfast staple! It goes best with garlic fried rice, eggs or salted eggs, and a dipping sauce of garlicky vinegar.
The Kapampangan Longganisa is a sweet (hamonado) pork sausage made with minced pork with typically 25-30% fat content, salt, garlic, brown sugar and freshly ground black pepper.
Growing up in a family of generations of butchers, we always have tocino and longganisa ready at hand. And so this is one of the recipes I want my son, nephews and nieces to learn how to make.
