That would be an interesting challenge. Ive been able to land ships on landing zones in RO but have never really attempted ship or booster catches just because of how finicky the gimballing and throttle can be sometimes.
This is the stock plume that currently comes with SEP. Try reinstalling the mod from the dev branch on the Github page at github.com/Kari1407/Starship-Expansion-Project/tree/Dev

There are mods that allow reverting to staging events so that you can "fly both stages"
