I would love to ask him about what potatoes they use at Amy's Drive Thru (of Amy's brand organic foods). They are some special proprietary variety that make excellent, excellent french fries. Better than fancy French fry shops. But I can't find anything about them 'cause it's a secret. ☹

I don’t feel he is “simple”; he understands the science of plant growth and cares that he produces the best potatoes possible and even that they be used in the best way considering their individual qualities. And I do agree with the sense that he strives to do the right thing. Zen-like. I dislike the attitude which some producers of our food seem to operate under, that they are simply selling product. They could make widgets or chicken carcasses and whichever there was more profit in is the one they would specialize in. I’d rather they care about their workers quality of life as well as the short lives of the animals grown for food and the nutritional quality of plants we consume.
A lot of people think that "mashed potatoes should be ploppable, not pourable" I agree to that, along with the other reason that I just realize recently; this video's mashed potatoes gave me the feeling of a pureé...

Also, anyone with your grammar shouldn't be saying stuff like; "only people with low IQ". That might make you think; "Well, that doesn't really measure intellect" and that's exactly the point.
The mashed potato part would become dry and floury. See how in their version of mashed potato there is a lot of mixed in flavours, putting those flavours in a high temperature would activate sour tones. The method they used keeps those deep flavours mellow and subtle whilst maintaining the texture that you see. But I think what they were trying to avoid was the 'cake' dilemma, if you have noticed in a lot of cakes, its hard to perfect the balance of glaze/fondant, sponge and if tiered caked, cream. Now remember cakes are assembled individually. So getting the right ratio of enough crispy parts and mash out be extremely difficult. If you need more convincing, if you have ever had cheesecake, one of my biggest pet peeves about it (despite me loving it), is the ratio of crust to cake ratio. You either have too much of that sour/sweet cheesecake, or too much crumbly/bitter crust. The method they used has a lot of versatility and control that allows the chef and the consumer to adjust to their preferences. Some may add more crispy bits, some may combine it all and have hints of crispy whist having hints of soft salty solid potato. Just overall a better approach to Thanksgiving recipes that cater to a variety of people with desired preferences.
i tend to keep my mash a little thin, top with cheddar and plain chips, toss under the broiler until melted and pull them out. gives them texture and flavor. but i also prefer augratin style potato most of the time
@@jaddytheteenblogger Hard Disagree. Broiling takes a few minutes tops and with butter and cream I don't agree that the mashed potatoes would get floury or bitter at all. The method they used doesn't seem like it's yeilding " mellow " potatoes as you put it, at all. There are many Shepard's Pie recipes that use a layer of mashed , Broiled potatoes as a topping. Or, Duchess Potatoes would have been a great crispy, mashed contrast they could have explored. Also, how does cheesecake have anything slightly to do with Potatoes? Your comparisons aren't related in the slightest and make no sense.
I was weirded out when I saw the soupy mashed potates but Ive finally tasted one in a steakhouse restaurant and it was a revelation. I think it may not be for everybody but it was the creamiest mashed potatoes Ive had in my life.

It looked like a soup. Mash should be thick, fluffy and creamy, and no lumps. A trick is to replace the milk with cream and really whisk it fluffy. Also if one wants mash potatoes crispy, just brown it in the oven.

Pretty messed up. They made a potato puree with bits of burnt potato on top when the assignment was to make mashed potatoes. The gravy also looks pretty thin, but hey at least they dumped a bucket of salt and MSG into it. Yeah...

Yeah, I'm a fan of mashed potatoes, not potatoes in a soup. ;) Seriously it does feel like they over did the milk and ended up with much too loose a mash.
The episode was really the essence of real cooking. You cook and you taste test. You experiment in making a change and then you taste test again. You refine improving what your cooking and making and you keep tasting and tweaking it. All the while improving the dish. That’s the real essence of cooking and learning the entire way with learned knowledge that so many people don’t get and just always wanting a ready made recipe.
So I know a lot of people are critical of their idea to make mashed potato soup, but I think with the crunchy topping is balances out. Having a mashed potato thats lighter is good because a lot of other parts of the meal are very thick, like the gravy and cranberry sauce.

The mashed potato part would become dry and floury. See how in their version of mashed potato there is a lot of mixed in flavours, putting those flavours in a high temperature would activate sour tones. The method they used keeps those deep flavours mellow and subtle whilst maintaining the texture that you see.
But I think what they were trying to avoid was the 'cake' dilemma, if you have noticed in a lot of cakes, its hard to perfect the balance of glaze/fondant, sponge and if tiered caked, cream. Now remember cakes are assembled individually. So getting the right ratio of enough crispy parts and mash out be extremely difficult.
If you need more convincing, if you have ever had cheesecake, one of my biggest pet peeves about it (despite me loving it), is the ratio of crust to cake ratio. You either have too much of that sour/sweet cheesecake, or too much crumbly/bitter crust.
The method they used has a lot of versatility and control that allows the chef and the consumer to adjust to their preferences. Some may add more crispy bits, some may combine it all and have hints of crispy whist having hints of soft salty solid potato. Just overall a better approach to Thanksgiving recipes that cater to a variety of people with desired preferences.
i tend to keep my mash a little thin, top with cheddar and plain chips, toss under the broiler until melted and pull them out. gives them texture and flavor. but i also prefer augratin style potato most of the time

The method they used doesn't seem like it's yeilding " mellow " potatoes as you put it, at all. There are many Shepard's Pie recipes that use a layer of mashed , Broiled potatoes as a topping. Or, Duchess Potatoes would have been a great crispy, mashed contrast they could have explored. Also, how does cheesecake have anything slightly to do with Potatoes? Your comparisons aren't related in the slightest and make no sense.

I was weirded out when I saw the soupy mashed potates but Ive finally tasted one in a steakhouse restaurant and it was a revelation. I think it may not be for everybody but it was the creamiest mashed potatoes Ive had in my life.

It looked like a soup. Mash should be thick, fluffy and creamy, and no lumps. A trick is to replace the milk with cream and really whisk it fluffy. Also if one wants mash potatoes crispy, just brown it in the oven.

Trick is mash and add butter first. Then the milk, keifer, buttermilk or cream. The butter coats the starch so the milky stuff does not water it down.

So I know a lot of people are critical of their idea to make mashed potato soup, but I think with the crunchy topping is balances out. Having a mashed potato thats lighter is good because a lot of other parts of the meal are very thick, like the gravy and cranberry sauce.
