I would love to ask him about what potatoes they use at Amy's Drive Thru (of Amy's brand organic foods). They are some special proprietary variety that make excellent, excellent french fries. Better than fancy French fry shops. But I can't find anything about them 'cause it's a secret. ☹

I don’t feel he is “simple”; he understands the science of plant growth and cares that he produces the best potatoes possible and even that they be used in the best way considering their individual qualities. And I do agree with the sense that he strives to do the right thing. Zen-like. I dislike the attitude which some producers of our food seem to operate under, that they are simply selling product. They could make widgets or chicken carcasses and whichever there was more profit in is the one they would specialize in. I’d rather they care about their workers quality of life as well as the short lives of the animals grown for food and the nutritional quality of plants we consume.

Stiff peaks are essential so that one can create a suitable reservoir of flow-able gravy. At some point the gravy dam must be breached, and the gravy must then cascade down Mt Potato and flood the unsuspecting towns folk of side dishes below.
As others said she switched to get a spoonful of gravy. That said once you added gravy to that mash you really did need a spoon to get a proper bit of the dish.

It looked like a soup. Mash should be thick, fluffy and creamy, and no lumps. A trick is to replace the milk with cream and really whisk it fluffy. Also if one wants mash potatoes crispy, just brown it in the oven.

I was weirded out when I saw the soupy mashed potates but Ive finally tasted one in a steakhouse restaurant and it was a revelation. I think it may not be for everybody but it was the creamiest mashed potatoes Ive had in my life.

Definitely agree! These are way too wet! I use an infused milk when I make mine, but I peel my potatoes, boil my potatoes, then throw them in a stand mixer and as long as they’re cooked long enough you don’t need a food mill because the potatoes are soft enough to not leave chunks. So I put a whisk attachment on and add cold butter which will melt in because the potatoes are hot, and then pour in the warm milk. But they add soo much melted butter and milk.. it’s more like potato purée. 🙅🏼♀️

I'm American and wondering this too. As far as I know, most families have two or more varieties of potato preparations at big gatherings like Easter, Thanksgiving, and Christmas. And we have mashed potatoes frequently through the year (not to mention baked, fried, and every other way!)
And Canadian people... roast onions and potatoes.... and mash. Not the runny kind they made neither. Something that you can shape a deep hollow to get more gravy. Rookies.
yeah I've had really smooth mashed potatoes with milk butter and sour cream and all that and they were never that runny lol I thought maybe I make them wrong but even in restaurants and cafeterias I've never seen runny mashed potatoes but idk

The issue here is just that they're overthinking it. Choose a potato, peel it, boil it, mash it by hand with some butter, milk, salt & pepper. Broil the finished product if you must have some kind of crispiness. Also, I am a HUGE fan of lil potato chunks in my mashed potatoes tbh.
Matt Alex exactly, hand-mashed potatoes with little lumps still left behind makes it feel authentic, homemade, and has great texture and flavor. Their runny “mashed potatoes” resemble something you’d get out of a store bought box.
Exactly. I look at what they did in the pizza episodes and they weren't overthinking it. They tried to make something that was authentic to the tradition while finding the perfect ingredients for the pizzas. This time they went for something non-traditional in terms of that mash they made. At least non-traditional in terms of what people have at Thanksgiving. I suppose it is a traditional mash if you are eating in a fine dining establishment.

Pretty messed up. They made a potato puree with bits of burnt potato on top when the assignment was to make mashed potatoes. The gravy also looks pretty thin, but hey at least they dumped a bucket of salt and MSG into it. Yeah...

It looked like potato soup with croutons on top. I have never seen anyone pour mashed potatoes out of the pot before. For me they really missed the mark on this one. I will stick with dryer fluffier mashed potatoes that can stand up to a good drenching in gravy.

And on the platter...they just flattened out. I serve mine in a bowl to keep them warm, but theirs NEEDED a bowl. My kids would be sad about those potatoes at Thanksgiving, especially since they’re grown and don’t get my food as often 😂

Personally I don’t like my mashed “potates” to be that liquid, you need to be able to make a volcano with your potatoes for the gravy
i actually like mashed potatoes that aren't really runny, and i don't mind if they are more "rustic" looking and lumpy. it kind of adds something IMO

I was weirded out when I saw the soupy mashed potates but Ive finally tasted one in a steakhouse restaurant and it was a revelation. I think it may not be for everybody but it was the creamiest mashed potatoes Ive had in my life.
I feel like this could have been a good episode if they had given any kind of justification for why they made the potatoes so runny.

I use an infused milk when I make mine, but I peel my potatoes, boil my potatoes, then throw them in a stand mixer and as long as they’re cooked long enough you don’t need a food mill because the potatoes are soft enough to not leave chunks. So I put a whisk attachment on and add cold butter which will melt in because the potatoes are hot, and then pour in the warm milk. But they add soo much melted butter and milk.. it’s more like potato purée. 🙅🏼♀️

I'm American and wondering this too. As far as I know, most families have two or more varieties of potato preparations at big gatherings like Easter, Thanksgiving, and Christmas. And we have mashed potatoes frequently through the year (not to mention baked, fried, and every other way!)
And Canadian people... roast onions and potatoes.... and mash. Not the runny kind they made neither. Something that you can shape a deep hollow to get more gravy. Rookies.

the really buttery mashed potatoes I've had have always had the consistency that's more like a thick fluffy cream rather than runny, like they're gonna slide around on a plate but not pour
The issue here is just that they're overthinking it. Choose a potato, peel it, boil it, mash it by hand with some butter, milk, salt & pepper. Broil the finished product if you must have some kind of crispiness. Also, I am a HUGE fan of lil potato chunks in my mashed potatoes tbh.
Matt Alex exactly, hand-mashed potatoes with little lumps still left behind makes it feel authentic, homemade, and has great texture and flavor. Their runny “mashed potatoes” resemble something you’d get out of a store bought box.
Exactly. I look at what they did in the pizza episodes and they weren't overthinking it. They tried to make something that was authentic to the tradition while finding the perfect ingredients for the pizzas. This time they went for something non-traditional in terms of that mash they made. At least non-traditional in terms of what people have at Thanksgiving. I suppose it is a traditional mash if you are eating in a fine dining establishment.

It looked like potato soup with croutons on top. I have never seen anyone pour mashed potatoes out of the pot before. For me they really missed the mark on this one. I will stick with dryer fluffier mashed potatoes that can stand up to a good drenching in gravy.
