Great blog as usual being from rural trelawny we are very touchy about stew peas traditionally we use corned pork with pieces of the head foot tail .we soak it up to 9 hrs to get the salt out with certain amount of water boil it only for 5 minutes to get out impuritives.if you boil to take out the salt you lose the flavor of the meat. the peas suppose to cook with the meat the you add your coconut milk all your seasoning and top it off with your spinners for thickening

Jerk is unique to Jamaica 🇯🇲 and doubles is unique to Trinidad and Tobago 🇹🇹 as mofungo is unique to Puerto Rico 🇵🇷. The scotch bonet pepper can be found everywhere in the Caribbean it is not unique to Jamaica. Ghost Chilli peppers are unique to India as Scorpion peppers are unique to Trinidad and Tobago. Food looks good but I see a lot of Jamaican cover the rice with plastic in the pot… the pot already have a pot cover so don’t need to use plastic cover since plastic is made with chemical and the heat will melt it into your rice and can be bad for u

Jamaica has peas and rice. I from New Orleans,La we call it Red beans and rice . We cook Red beans and rice on Monday to because My Grandmother who was born in the year of 1900 . She said they cooked it a big meal on a Sunday. Then came work day and most house wife's were trying to wash and get other things in the house done so they would beans and have it ready before the evening. We use salt meat also .

I saw that, too, and I had to object. Yes, you should not use a plastic bag to seal your rice pot or any other pot. Very unhealthy! Instead, wet a clean wash cloth and place on top. The water in the cloth creates the seal. Too much industrial chemicals in the plastic.
@@zulubuzz8516. This is a bad common practice. Number one, the toxic and number two. It is unhygienic. This can make you sick 😷. Why not use paper towels or foil wraps? Like to put on top of the rice? I have never used any of the above mentioned. But the paper towels on top of the rice to take out the moisture is the best one to use.👌. I left home 50 years ago. And I have never seen anyone use/put plastic bags 🎒on top of the rice 🍚 when they are cooking 🍳it. Things really changed in the way how Jamaicans cook 🍳. Well. Not all. Some of us.
