When Jordan Rudess first joined Dt in the late 90's he had very long kind of poofy wavy dark hair and no facial hair. You can see him with it in Dream Theaters scenes from Live Scenes from New York 2000 DVD, where they played the entire Scene from a memory album start to finish.

Their no. 1 influence definitely was/is Rush (as the story goes, John Myung and John Petrucci met Mike Portnoy while they were waiting in line to buy tickets... to a Rush concert!). Even though there are no Rush callbacks in Octavarium, the bit where John and John stand face to face and play each other's instruments is pure Rush - Geddy Lee and Alex Lifeson used to do it live all the time!
