  • In the Dutch city of s-hertogenbosch I found Dutch street seafood in the middle of a beautiful plaza. The gentleman serving the food trucks were very courteous and proud to explain their local dishes as well as history. I found fried seafood to be amongst the more popular such as the kibbeling and the raw herring.
    The Dutch street food caught me by surprise since all Dutch restaurants are closed except for take away which is what I did. It was delicious and big thanks to all who took part. I hope you guys are hungry and ready to try some Dutch street seafood.

    finally a dude that does it solo and not some paid for commercial i try stuff in (the netherlands) while many still get it wrong and say holland XD. well done hopelijk you can try other spots like het gooi food markets or such depending on the days. also take into account all fish caught need to be frozen full 24 hours so full on fresh is never 100% although the moment its defrozen and cooked for you it will feel and taste as fresh as it was caught mayby a few months ago, i have tried haring thats 30 hours fresh in catch so 6 hours after law freeze code i get one to try and oh lord i notice a little more differance compared to most

      honestcooking.com/kibbeling-deep-fried-battered-fish-pieces/ Easy to make at home and the name of the sauce is ravigotte saus. The spices: one teaspoon blackpepper, garlic, paprika powder, onionpowder and a half teaspoon gingerpowder, cayenne pepper and salt. I just use the frozen cheapest pollock filet. In the past it was made from the cheeks of codfish but that makes it too expensive.

    When herring is caught, it goes through a process of "haring kaken", removing where gills and organs are removed except for the pancreas. No salt is used (herring is already salty), the fluids of the pancreas makes the herring ripe so that it can be eaten for a longer time. Oh, try the herring with onion pieces.

    That’s what my Indian friends should learn and make habits what he did between 3:13 to 3:17, carry your own anything until you find garbage bin instead of blaming government that there isn’t garbage bin, you have to make effort yourself so your city looks clean.     's Hertogenbosch: 's is from "des" (genitive) = "from the", "Hertogen" = "Dukes", "bosch" = "wood":
    all and all: "The wood of the dukes".
    The herring is cured in its own enzymes from the pancreas, a process called "kaken" and invented by a Dutchman Willem Beukelszoon. This made the trade of Dutch herring over long distances a lot easier and the Dutch very rich. Another way to preserve fish is smoking: you saw the eel, but there is also smoked herring: "Bokking" and smoked macarel: "gestoomde makreel", I recommend it.

    The white sauce is ravigote, which is originally a French sauce, but likely has many different varieties. It's vinaigrette with capers, garden herbs and finely chopped shallots/onions.
    Like they say, it's a bit like tartar sauce.

    Both my parents were born and raised in 's Hertogenbosch. It is an awesome town. I really recommend to go there (after lockdown). It has such a nice vibe and the most beautiful Cathedral.

      And by selling it. The Dutch found out that if they took some guts out and left some specific ones in and put in brine, it could be preserved much longer. So thats why the fish monger cleans it in front of you, he removes the resting guts, and after that it will go off quite fast. Soon after that they started processeing the herrings like this on the boat. That's how they could feed many people this nutritious fish all over Northern Europe without having to get back on land first and took over the herring trade from cities like Lübeck. Through it's steady income, innovation and seamanship this layed the foundations for the domination of all Northern-European trade in the 1500 and 1600's, which led to domination of all Europe's trade and a global trading empire later on. Nontheless, the herring fishery always remained bigger and more profitable than for example the infamous VOC, which monopolized the spice trade.
      Also interesting is the incredible richess of fish in the seas those days. Many people refused to buy fish that was already dead besides herring, a common complaint from employees like servants was to have to eat salmon more than once a week. Kibbeling used to be exclusively from cod cheecks, the best part of course, the rest of the cod was only good enough for the cat, and maybe the really poor.
      Traditionally herring tends to be a bit saltier further inland because of preservation. These days the all get shortly frozen to kill off a rare but rather nasty parasite. The onions were to balance/mask the taste of herrings later in the season as they had been kept in the brine for longer. Besides these there is also cold smoked herring, warm smoked herring, pickled herring and pan herring. I prefer smoked mackerel, and smoked eel is a proper and quite expensive delicacy.

      @@DenUitvreter That's pretty cool but what you're saying about the onions is not true! Lots of Dutch fishermen used to get 'scheurbuik'. A acute vitamin deficiency. Because they'd be out at sea for extended periods of time and did not have the technology to preserve their vegetables long enough for the whole trip. The only veg we had that wouldn't go off in a few days, was onions. They'd chop them up and eat some of what they caught, so they could stay at sea for just a bit longer without getting sick!

      @@IIchicgo I believe scurvy was a problem on the long intercontinental journey's later on with sailing for months without fresh food and I doubt the little vitamine C in onions would have had the desired effect. Not saying it didn't happen, just doubting that's the origin.
      If you're old enough to remember herring from before it had to be frozen, Hollandse Nieuwe was still a real thing because not only the unfrozen texture was better, but also because the taste would evolve after the catch in the late spring. More salty and a generally stronger taste. Not saying worse, but different and not to any ones taste, certainly not with the same freshness as right after the catch. Those herrings later in the season certainly weren't overpowered by the onions.
