same here,i have seen this setup before, very clean but the workload is too much... a chef and a cook should not be operating a cash and making coffee like a barista and also opening and closing and managing and traning... the restaurant business became shit these last few years

In the UK all I see is different shades of brown eggs. I thinks it's down to the breed of chicken. Not much difference in the egg. Freshness is the most important thing
In the uk we use unwashed eggs (brown). Unwashed eggs have a natural protective coating on them which makes them less absorbent to bacteria which means we can keep them out at room temp. The us only uses washed (white)eggs and do they need to be kept chilled. Its just different regulations

Just me, but I sometimes have a scrambled egg with some nice fresh potato fries in the omelette. Probably just due to how my family cooked it, and it stuck honestly.
Seem a really good chef and take pride in what you do but IMO you should be doing better than serving food to truck drivers. If you enjoy that then fair enough but could see yourself working in a top restaurant and taking that step up 👍🏼
