- The Chicken, Leek, and Mushroom Filo Pie is a comforting and delicious dish that's perfect for a family dinner. It features tender pieces of chicken, earthy mushrooms, and sweet leeks, all cooked together in a creamy, savoury sauce. This flavourful filling is encased in layers of crisp, buttery filo pastry, which gives the pie a delightful crunch.
To make it, you start by cooking the chicken until it's browned, then sauté leeks and mushrooms until they're tender and aromatic. You mix the chicken back in, along with garlic and thyme, and thicken the mixture with a bit of flour, chicken broth, and heavy cream. This creates a rich, creamy filling that's seasoned perfectly with salt and pepper.
The filling is then spooned into a pie dish lined with filo pastry sheets that have been brushed with melted butter for extra flavor and crispiness. The pie is topped with more layers of buttery filo pastry, creating a beautiful golden-brown crust once baked.

Taking Cooking food back to basics.
Ingredients:
1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
2 tablespoons olive oil
2 leeks, cleaned and thinly sliced
2 cups mushrooms, sliced (such as cremini or button mushrooms)
2 cloves garlic, minced
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
1/2 cup chicken broth
1 cup heavy cream
2 tablespoon all-purpose / plain flour
1 tsp English Mustard
Salt and pepper to taste
10 sheets of filo pastry - 5 for the bottom and 5 for the top
1/2 cup unsalted butter, melted

After cooking the mushrooms for about 4 mins - chuck the chicken back in

Now, the filling looks easy enough to do but that filo pastry is gonna give me a Lord Have Mercy moment. I can visualise the filo in bits all over my kitchen.
Trust me, yes it's delicate but it doesn't have to look great i promise, near enough is good enough, and it's delicious if you can get your hands on it.

Hi Rik, looks fantastic mate, and a good shout out for the Turkish pastry sheets. There are called 'Yufka', and they come in triangles which you can use in a frying pan of rectangular sheets for baking trays, and where i live at least very easy to get from my corner shop. And your right, they are very very thin and very delicate but boy do they do the trick. Would recommend people try them out. Cheers mate.

Spanakopita, one of my most favourite things in the world and i also immediately thought of that when watching this recipe. Years ago travelled through Greece and i had hardly any money and ate Spanakopita with yoghurt at roadside truck stops and cheap cafes. So good!

This was SO good! I was too scared to try to turn the pie out of the pan. I anticipated a goopy mess. So instead I used a springform pan and it worked really well! Thanks Ric. This is the second of your recipes I’ve tried. The first was Rumpledethumps. Both are winners that I will make again.

TAH-DAH!😂 Brilliant! I love filo pastry, my signature dish is a spanakopita - spinach and cheese pie. OMG! And you’ve done it again, I have half a cooked chicken in the fridge, mushrooms, and garlic. No leeks so I’m doing finely shredded cabbage out the garden. And a bit less flour but more double cream. ( I’m type 2 diabetic so eating low carb - and I miss pies! - so cut back on the flour a bit.) Really looking forward to ding this tomorrow for lunch! Hurrah! 😂

Hi there Rik & thank you for another fabulous recipe/video…..I make a satay style chicken pie in a very similar way swapping out the leeks/mushies for shallots & finely diced potato & using coconut milk instead of the cream. I found that the chicken thighs were tastier but that’s just my preference & I’m going to try making your enticing version later today. Filo pastry is a joy to work with as you can make it however you wish & perfection definitely doesn’t matter. Hello Rik, I don't know about backyard chef this is Master Chef quality. Would this recipe work if you use the frozen filo sheets? If so would you still use 5 sheets on the bottom and 5 on the top?

Hi Rik, tried the recipe with bought in French filo pastry that's available here called "brick", but found the added butter was too much fat content for us and didn't work. However made up some more filling and added a puff pastry top in an individual deep dishes and it was absolutely magnificent. 10/10 on the 'om' factor. Thanks Malcolm.
