Gobi Gajar ki Achaar
Preparation time: 10 minutes
Cooking time: 15 minutes + boiling time
Serves: 4
Ingredients
3 Carrots, cut into thick strips
250 gm Cauliflower florets
For the paste
10-12 Garlic cloves
3 large Onions, roughly sliced
2 inch-Ginger, roughly sliced
Vinegar ; Jaggery Syrup
¼ cup Vinegar
½ cup Jaggery, roughly chopped
For the masala
¼ cup Mustard Oil
Prepared paste
1 tsp Red Chilli powder
Salt to taste
2 tsp Garam masala
Boiled Carrots ; Cauliflower
Vinegar ; Jaggery Syrup
1 tbsp Mustard seeds, coarsely grounded
Process:-
● In a grinder, add ginger, garlic and onions. Grind it into a fine paste. Keep aside for further
use.
● In sauce pan, add vinegar, bring it to a boil, reduce the flame and then simmer for 3-4
minutes. Then add jaggery, cook till it melts and reduces to a semi thick consistency.
● Meanwhile in another pan, heat mustard oil to a smoking point, reduce the flame. Add
prepared paste, mix well until raw smell goes off.
● Add red chilli powder, salt and garam masala, mix well. Add par-boiled carrots and
cauliflower, mix well.
● Add vinegar & jagery syrup, mix well. Add coarsely grounded mustard seeds, mix well.
● Remove it from the flame and let it cool down to a room temperature.
● Store it in an airtight container for 4-6 months.
● Enjoy with the choice of paratha.

She reminded me of my Dadi when she was fit and fine. Today my Dadi isn't all together in her mind, so I do miss her ...my conversations with her...the food she cooked for me and the love that she still showers on me. Such love and care and fortitude...it's rarely seen in today's world. You and I Ranveer are one of those lucky ones who have such fond memories of our lives with our grandmothers.
I have never seen any show like this it got tears in my eyes to see the love and warmth in thier talks ... beautiful

This is my first ever comment on TH-cam after watching videos for decades. I saw this dadi talk and it reminded me of my dadi. I was 7 when she passed away but this video reminded me of all things my dadi did for me and taught me. My fondest memories was of her and around the subject of food. Your channel is amazing. Thank for helping me remember her.

Ranveer I started seeing your episodes since last 6 months but those out of home episodes I liked for your professionalism, but kam me zayada during lockdown I started liking your episodes for the best human you portrayed. then I came across this maa ki baat with this dadi was super with her talks I started to visualize the unsaid words. You were so humble & natural .
Your mom is such a saint, so sweet. Anyone who has their moms blessings will never fail in life.

I have recently watched few episodes of Ranveer Brar's cooking.His dealing and talking style with the lady chefs is so down to earth and adorable. He has a restaurant in Brampton which I am yet to visit.

Ranveer Beta, I can not thank you enough for this delicious recipe of Achar. I am living in NY for the last 36 years. Since I came never had this Achar. Always felt why I never took recipe from my mother, aunts . Never searched the web either. When I saw this ,it reminded me of old times when it was prepared at home. I followed it and it tasted same. Maine unhe kitchne ke bahar shayad hi dekha hai. na kabhi unhe sote dekha. jab beemar hui aakhir aakhir mein bas tab unhe baitha hua paaya. unhe khana banane mein behad maja aata tha. I think i get that from her. aur wo itni saari tarah tarah ki cheeze banati thi ke aaj mein soch ke hairan ho jaati hoon. 12 bachhe janne ke baad, itna kaam koi kaise kar sakta hai. baaki duniya ke motivational speakers ka gyan ek taraf aur daadi-naani ki baat ek taraf. pata nahi kyu, par inki baat dil mein bas jaati hai. Humbleness is appreciated worldwide but indians take it to different level but none more then punjabis. You may know "Sewa :- Selfless service" being big part of sikh religion but even in sewa, "Jhutia di Sewa" and "Bhandeyea di Sewa" to be at the top because nothing teaches you humbleness and humility more than arranging shoes and washing dishes of strangers. Doing these two sewas is for sikhs what taking a bath in ganga is for hindus.
