A hidden gem to try is Goddy and Stella’s beach food stand situated on el holi beach between the Grand Venetian and the Sunscape. You should see their blue umbrella and they are there everyday except Sunday. They get there at 1pm and stay until the food runs out a few hours later. Also Melissa’s in Centro is a great off the Beaten path restaurant to try!

Nuevo Vallarta is a place with more exclusive resorts than Puerto Vallarta. But PV is much more authentic and fun. But ultimately it is part of the same thing, because Nuevo Vallarta would not exist without Puerto Vallarta (that's where the name comes from), it is just an extension of it.

For a food blogger you seem surprisingly confused by basic Mexican food.
I hate travel videos that start with an arrival by train, taxi or airport.
Seems like another overpriced beach destination, $500 for a shitty hotel..no thanks.
