Long time canner, and I make this soup every year. This one is my favorite home-canned soup, to be honest! I usually make 2 quarts plus 1 pint of a home-canned meat for a 2-meal soup. And this soup never fails. I loved watching this video just because your methods are clear and concise, and your kitchen is so clean. Beautiful goodness in jars!
Beautiful in the jars and no doubt delicious! And friends will ask me WHY do I have so many stock pots? If they canned; they would know! I am glad to see you back in these TH-cam streets and hope your summer was prosperous. Mine was HOT, very HOT summer.
Yes I have lots of pots and husband had to build me another closet…. lol my summer was very hot, hotter than normal! Had to water the garden almost every day but it grew enough food to keep me busy! My tomatoes are coming in 50lbs at a time at the moment!!!
I had to chuckle a bit about your corn! I used to work with a guy who grew very big gardens. He grew a lot of sweet corn. One year was a bumper crop, as he checked the corn for harvest the corn needed a little more time to be perfect. When the corn was ready, the Raccoons ate the WHOLE crop the night before! Those little bandits are experts on when to harvest.
I just canned 10 qts of this soup. I made turkey stew with it and it was the best stew ever! I can't believe I didn't know about this. I plan on canning a lot more. Thank you, I can't wait to discover what I can make with it. My new favorite.
Thankfully we can grow lima beans here in NC. Because they are mine families favorite bean. There have been years I had to buy them along with canned crushed tomatoes, for whatever reason. I don’t like the texture of the tomatoes in chunks so I either buy or make crushed tomatoes. These gives the soup a beautiful color and spreads that tomato goodness throughout. It is such a versatile soup for many recipes and I look forward to seeing your uses. ❤
Looks so beautiful, I bet it tastes amazing too! What a great way to use up fresh veggies. Definitely glamorous! 😎 Our fridges are bursting with fresh vegg right now. The paper towel holder for the lids is an awesome idea! Take care LeAnne! 🌺
I am sooo happy that you posted this. I need to get this canned up again. We are down to our final few jars. Can't believe we went through this so fast, but as you have said it is versatile. And not hard to prep, while watching utube videos!
You are so right having a jar of vegetable soup ready made to use in a number of meals., is such a great comfort. I also thnk it great that you are listing the canning book you used and the page Helped me find much more quickly.
I love your comments about washing the jars before you put them on the shelf. I’m sitting here avoiding washing my jars of freshly canned green chili gravy I canned last night.
Leanne that soup looks delicious! Especially with fresh corn! Can’t wait to see how you use it in other recipes! I’m going to have to make some with fresh buttered bread now❤
So glad you’re back making content. I know I’ve said this before, but it begs repeating, you give the best instruction on canning! You are so thorough, yet make it so pleasant to learn the do’s and don’ts of canning and the why’s and why not’s. I so appreciate you for taking the time to share such important information and tips. Thanks, my dear friend. Looking forward to what you have planned next.
Yeah, I love a versatile soup! Happy to see you back, and excited to see what your recipes are for your next video! Hope you are participating in Canuary 2025! ❤

Garden is still producing minus the corn...lol. Tomatoes are coming the door 50lbs at time. next up to spaghetti sauce and catsup. I already did basic tomato sauce, salsa, 3 batches of pizza sauce and this soup with the tomatoes. my green beans struggled. the first row barely got me 20 jars but howard planted 2 more rows and they are blooming now.

Just ran onto your channel. Haven't tried this recipe yet. You've inspired me to do so. Right now it's pear and grape season in my daughter's backyard so we're canning bushels: jam, syrup, sauce and juice. 😱 You have a very nice channel and can't wait to see the recipes you use for this. Thank you

Hi LeAnn! I’m so glad you are back even though I know you had a very busy summer. I do appreciate you making videos. Your vegetable soup base looks delicious and I’m sure they look beautiful on your pantry shelves. That my least favorite too, but got to wash them jars. Hope you and your family have a very blessed night!
Ive never canned so im hoping to learn a lot. Im excited and alittle nervous. Canning has always intimidated me so that's why I've never done it so hopefully watching this I can learn a lot.
Gail I have lots of canning step by step instructional videos on my channel and I am by the book. Educatoning yourself will help get you over your nervousness. If you have anyone other questions don't be afraid to reach out to me in email, instagram or facebook.
That sure does make a pretty soup. I can imagine how happy your family will be to have this vegetable soup on the shelf. Thanks for sharing. Have a Blessed day.
This is my first time seeing your channel. Thank you for a wonderful video. It was so detailed for a newbie canner. I'm looking forward to seeing more of your great ideas!! ❤ from 🇨🇦
It is so nice to see a video from you again, LeAnne! Sorry the racoons destroyed your corn. I canned this soup when I was a new pressure canner (minus the lima beans, ick) and it lasted a long time since Hubby doesn't like veggie soup. Still in the middle of the video, hoping to get more ideas of how you use this up in various casseroles. You are such a good cook, Howard is a blessed man. (Edit: I'll be watching for the next video for sure!)
What beautiful soup! It looks like jewels in the jar. I don't like the consistency of cooked celery, so I might try just cooking a few stalk of celery in the soup and taking it out before I can. Going to be done with all store bought vegetables (prefer frozen) this winter!
That looks yummy. We don’t like Lima beans but I could sub in some English peas. It would be a great base for a chicken pot pie or you could add meat and be a really hardy soup. Thanks for the great video!! I am glad I found you. BTW…I wash my jars before putting them on my shelf too.
I would just leave out the limas. Substitutions are not a good idea. I would've made a pot pie if I would've had time to film it, but you're right it makes a great pot pie or cottage pie.
Hi LeAnne! I just had to pop in to tell you I cooked a chuck roast and put it with your veggie soup recipe and let me tell you… IT’S AMAZING!!!❤ I used 3 quart jars to make a nice pot with some fresh bread. We still have 7 more quarts.. lol I need to make more😊 Thank you so much for this recipe! ❤

Yes, they are very smart creatures. I haven’t seen one in ages here but they made their presence known that night.
Same here they left a nice neat pile of picked clean cobs and husks in the middle of all the corn rows. NOT A ONE WAS LEFT 😐
I'm A newbie canner and I thank you for being so thorough in your instructions.
Ooooh, thank you for the paper towel holder for the lids!!
Yay! You're back! Looking forward to the next video on how to use this soup in different ways. Thanks, LeAnne
