Take your pinto beans, drain them off and add them to your taco meat. I've left them as they are and I've smashed them. It's a great meat stretcher and you are using up you beans.
I came over from That 1870's Homestead and she said you were great. I just watched you and I really like your honesty and your do's and don'ts'. I grew green beans, canned 119 pints jars and was very proud of myself until I re-read the instructions. I only pressured canned for 10 minutes. I had to toss all 119 jars out and I still have not grown any green beans and that was 10 years ago. Thank you for sharing.

I laughed so hard when you talked about swiss chard! with you on pickles; when we came back from Spain where for 2.5 years I did not get ONE pickle spear with a sandwich I went hella crazy canning pickles. Took us 4 years to eat them all and Vern would say " oh a pickle spear with beef stroganoff; OK" . GREAT tips on how to use your jars for different meals too.

It's now sweet. fill your jars and pressure can. great for a side instead of mashed potatoes or for tarts and pies. much easier than peeling and blanching. And you might want to try the no soak method for canning beans. they don't get as mushy. I agree though that small batch cooking for beans works also. And I agree with the peppers. you can throw frozen peppers in a fry pan and you'd never tell them from fresh some things are not can-able. lol that's why these types of videos are helpful

I showed how to make yogurt because in January 2021 she mentioned in a video she wanted to learn how to make it. Now 9 months later here I am! There is a Ball book about canning small batches. That's how I would do cucumbers. Small batches relish, dill,bread and butter.About your beans don't pre-cooked your beans before you can them that is if you're just canning beans. And if you still don't like the look of them just make them into refried beans afterwards then.On your pumpkin's I scrub the outside of mine pumpkin real good then cut them into chunks then drain them then peel them afterwards its alot easier that way.Or cut them in half and try roasting them, scoop out the inside and use in a recipe that way. Or just store your pumpkin's whole as they are. For later use their good for 6-8 months. I would use pints or pints and an half instead of quarters for your canning of pumpkins the only difference is I mashed the vegetable before you put it in the jar. It's enough for 1 pie,1 cake, 1set of cupcakes. But you probably already know this so I'll will stop talking. But here's a recipe to help get read of some of your not so good looking beans. Its called Mexican casserole it doesn't look good either. But my kids love it. They even ask me to make it on their birthday sometimes. 2qrts of drain pinto beans mashed, 1 can of cream of mushrooms, can cream of chicken, 1 4oz can of green chilies peppers, 1lb of ground beef with 1 onion chop cooked and drained off any fat, then mix altogether, next spray a 9×13 pan with oil, 1st layer of your casserole is 1 large bag of doritos chips crushed spread out evenly on the bottom of the pan, next layer of the casserole is cheese (cheddar or Mexican blend of cheese )your choice you will need 4 cups,last layer is the meat mixture pour on top cover tin foil bake at 350 for 30 minutes. Like I said it doesn't look good but it sure tastes great.
You don't have to cook those beans one minute before you can them. You put a "scant cup" in a quart jar, your salt and spices. I add a jalapeño and garlic because that's my style. Then pour in boiling water to the fill and throw them in the pressure cooker for 90 minutes. Now beans in summer with out turning the kitchen into a blessed sauna.

Girl, run those pickles through the grinder and use in salads all summer. Potato, macaroni, chicken, egg, tuna...we eat it on hot dogs and burgers as well.
Girl! Dump that bruschetta in your spaghetti sauce and free up those jars! I'm with you on pickles - when I want them, I make cucumbers and onions fresh. Otherwise I don't really eat them.
Here's a few tricks for crisp pickles: add horseradish leaves or grape leaves, make sure you start with crisp cucumbers, and the best tip, let your brine cool before pouring over your pickles. There's enough acid in the vinegar to kill everything.

@@MennoniteFarmhouse please do can beans. I’ve been canning for 40 years. When our daughter went to college I would can her a case of black beans so she had her Momma’s beans. I have to keep beans canned and on the shelf. I usually will can about 10 pounds at a time. So worth it. Just soak them and then gently heat them up with clean water. Put them in hot jars and put in hot canner. They turn out perfect. Not mushy. You will be sold. With the price of meat we probably will all be eating more beans! Thank you for your video.

2 years ago I found that I can take all my different tomatoes that I grow. And put them in my nesco roaster and cook them down. And that is whole tomatoes that I core. Then after they break down. I put them into my vitamix and grind them all up. Seeds and all. Then it comes out a smooth tomato sauce. With no work and no waste. Only way I will make any of my sauces from now on. I've been canning for going on 44 years now. And have pretty much canned it all by now. My hubby teases me that if something doesn't move quick enough. I will throw it into a jar and can it! He's pretty much right. My 5 things I will never can again is the following: 1. Green tomato mincemeat. 2. Pickles, I only like crisp Pickles. 3. Broccoli. Yuck! 4. Cauliflower. Yuck! 5. Pumpkin. I like to roast it, puree it, then freeze it in 2 cup amounts in a quart freezer bag instead. 5 things I will always can: 1. Tuna. Won't eat the catfood Tuna in the stores. 2. Green beans, I can then long, cut, frenched, sweet and sour, and with different spice blends. 3. Shirley sauce. 4. My newest fave, ketchup. (From living traditions homesteads recipe). 5. Soups. As I'm allergic to gluten and dairy and can't buy any soups. So I make all my own kinds. I think I have 16 kinds right now on my pantry shelves. I think I canned around 2000 jars in 2020. Over 800 jars in 2021. And already around 250 this year so far. So it shows I love to can. And will probably can alot more this year as I'm able to find jar lids now. Last year it was hard to find them. Thanks so much for putting this series on. Loved it!

With excess peppers, try the NCFHP marinated peppers! Great to pour over a roast in a crockpot or include in a pasta dish. A definite Italian flavor that we love! Plus you wb them
I'm always impressed with anyone who can can. Can Can LOL. I find it VERY nerve wracking as I don't want to do it wrong and grow bacteria by accident. You did a great job though!

I know what you mean - the biggest hit in our house was MUSHROOMS - I couldn't put up nearly enough of them, the kids would eat them out of the jars when I wasn't looking ... but made some at the cabin, and just the change in wells changed the taste!
That’s great! I’m putting a quilt together right now… of 12 inch Ohio stars. They were orphan blocks [20] that were hand pieced and hand sewn together that I bought at a Salvation Army fabric sale. I cut more blocks to make a good size quilt and I’m putting them on point.

That problem with pickles persists here! I had to "clear shelf space" the other day. I was shocked how many pickles were there that were several years old.
I canned a bunch of peppers, too. My big mistake was that I should have peeled them first because if you leave the skin on they will be bitter. Or at least that's what happened to me. I did them by themselves and I also did them in Pepper Soup without peeling and it was a soft bitter mess! On the other hand, I made another batch of Pepper Soup but this time I peeled them and it is REALLY GOOD.
Thanks for hosting this collab. I'm taking notes of things that are recommended and discouraged. When I evaluated my pickle consumption, I realized that I sliced them on burgers, chopped them to make tartar sauce and chopped them to make 1000 Island dressing. Trom that time on I decided to make Dill Relish instead. it meets works for all three uses. Canned pumpkin is on my ALWAYS list. I used it to make pies and pumpkin bread and feed it to the dog. The vet suggested it as a fiber source (nice firm turds). Draining the pumpkin doesn't bother me. I know if I want to bake with it I need to prep it the day before. I use up any leftover in Pumpkin Oatmeal. For me the best peeling technique is slice the pumpkin and then remove the peel from each slice using a knife. Yes, it is a little time consuming.

That’s a great idea Julie! We love Cucumbers and onion salad around here! It’s a PA Dutch dish from what I believe.

Put them in hot jars and put in hot canner. They turn out perfect. Not mushy. You will be sold. With the price of meat we probably will all be eating more beans! Thank you for your video.

2 years ago I found that I can take all my different tomatoes that I grow. And put them in my nesco roaster and cook them down. And that is whole tomatoes that I core. Then after they break down. I put them into my vitamix and grind them all up. Seeds and all. Then it comes out a smooth tomato sauce. With no work and no waste. Only way I will make any of my sauces from now on. I've been canning for going on 44 years now. And have pretty much canned it all by now. My hubby teases me that if something doesn't move quick enough. I will throw it into a jar and can it! He's pretty much right. My 5 things I will never can again is the following: 1. Green tomato mincemeat. 2. Pickles, I only like crisp Pickles. 3. Broccoli. Yuck! 4. Cauliflower. Yuck! 5. Pumpkin. I like to roast it, puree it, then freeze it in 2 cup amounts in a quart freezer bag instead. 5 things I will always can: 1. Tuna. Won't eat the catfood Tuna in the stores. 2. Green beans, I can then long, cut, frenched, sweet and sour, and with different spice blends. 3. Shirley sauce. 4. My newest fave, ketchup. (From living traditions homesteads recipe). 5. Soups. As I'm allergic to gluten and dairy and can't buy any soups. So I make all my own kinds. I think I have 16 kinds right now on my pantry shelves. I think I canned around 2000 jars in 2020. Over 800 jars in 2021. And already around 250 this year so far. So it shows I love to can. And will probably can alot more this year as I'm able to find jar lids now. Last year it was hard to find them. Thanks so much for putting this series on. Loved it!
Wow! That’s amazing! You sound like me minus being gluten and dairy free. I can probably that much as well. My husband says we will have to beat up anyone coming here looking for a free meal!

With excess peppers, try the NCFHP marinated peppers! Great to pour over a roast in a crockpot or include in a pasta dish. A definite Italian flavor that we love! Plus you wb them

I know what you mean - the biggest hit in our house was MUSHROOMS - I couldn't put up nearly enough of them, the kids would eat them out of the jars when I wasn't looking ... but made some at the cabin, and just the change in wells changed the taste!
I just opened a jar of mushrooms I canned a few weeks ago in a video and they are so amazing good!

That’s great! I’m putting a quilt together right now… of 12 inch Ohio stars. They were orphan blocks [20] that were hand pieced and hand sewn together that I bought at a Salvation Army fabric sale. I cut more blocks to make a good size quilt and I’m putting them on point.

That problem with pickles persists here! I had to "clear shelf space" the other day. I was shocked how many pickles were there that were several years old.
I heard the other week any cucumber with seeds are too big for pickles… so maybe I will try next year.
I pickle bell peppers with garlic.

I canned a bunch of peppers, too. My big mistake was that I should have peeled them first because if you leave the skin on they will be bitter. Or at least that's what happened to me. I did them by themselves and I also did them in Pepper Soup without peeling and it was a soft bitter mess! On the other hand, I made another batch of Pepper Soup but this time I peeled them and it is REALLY GOOD.
Totally agree on the pumpkin, won’t can it again. And yep way too many pickles!

Thanks for hosting this collab. I'm taking notes of things that are recommended and discouraged. When I evaluated my pickle consumption, I realized that I sliced them on burgers, chopped them to make tartar sauce and chopped them to make 1000 Island dressing. Trom that time on I decided to make Dill Relish instead. it meets works for all three uses. Canned pumpkin is on my ALWAYS list. I used it to make pies and pumpkin bread and feed it to the dog. The vet suggested it as a fiber source (nice firm turds). Draining the pumpkin doesn't bother me. I know if I want to bake with it I need to prep it the day before. I use up any leftover in Pumpkin Oatmeal. For me the best peeling technique is slice the pumpkin and then remove the peel from each slice using a knife. Yes, it is a little time consuming.

I love the crunch of store bought pickles when I’m at a gathering! I might try your method of canning pumpkin. I just hate not using the whole jar when I open it. Yeah, with peppers, I'm right there with you on not canning them. I don't care for them that way either. I either freeze or dehydrate mine if I have an abundance. I like seeing what you and other people like and don't like to can. So interesting!
