BAKING WITH A TODDLER MUFFIN & PANCAKE RECIPE (vegan & toddler friendly)

  • One bowl. One recipe. Multiple ways to eat. I love this recipe for the simple fact that i can use it to make muffins, pancakes, or waffles. Toddlers love it, adults love, we all love it. Enjoy the cooking chaos with a toddler :)
    RECIPE: (makes 12 muffins):
    3/4 cup Soy milk (Costco brand organic with vanilla flavor)
    1 tsp Lemon
    6 Medjool dates (more if you want it sweeter) OR 1/4 cup maple syrup
    2 tsp Vanilla extract
    2 Ripe bananas
    2 cups Oatmeal (we prefer One Degree Organics brand- onedegreeorgan...)
    2 tsp Baking powder
    1/2 tsp Baking soda
    1/4 Salt

    STEPS:
    Blend soy milk, lemon juice, medjool dates (or maple syrup), vanilla extract, ripe bananas, oatmeal, baking powder, baking soda, and salt.
    For muffins, keep the batter thick. do not overblend.
    For pancakes, add extra milk or water to thin the batter.
    PRO TIP:
    Use super ripe bananas for extra sweetness.
    Customize with your favorite add-ins like peanut butter, fruit, chocolate chips, or nuts.
