- Rava dosa is a very popular variant of dosa from the South Indian cuisine. These are crispy, netted and thin dosas made with semolina or rava. You'll find this dosa in the menu of all the Udipi Hotels in Mumbai. This place in the video is located in Zaveri Bazar Khaugalli, and they serve delicious and super crispy Rava dosas made in butter which makes it even more tasty.

Mumbaikars seem to love making things complicated. The best Rava dosa is simply the batter + gingelly oil. A good variation adds onions and/or pepper corns. No cheese, coriander, coconut, and additional spices - or nothing smeared on the insides. When every dosa has too many things going on and becomes rich in content - they all start tasting different. The foodies end up missing the fun from simplicity. I hope this shop serves rava dosa plain or just with onions.

The batter has Superfine Rava, Rice Flour and all purpose flour in a 3:1:1/2 ratio mixed into a flowing batter.
Say maida instead of all purpose flour.
