Spot on and smooth delivery. My only thing is, i use some of the collected fat, plus butter, to make the roux.....whether off a chicken, turkey, or even pork fat......i always seperate from the stock, but as long as its strained.... The fat serves really well in a roux.... The butter adds a lttle sophistication, and that classic velvety body .
My Grandmother always save some potato water. After they are cooked use some of the water to help thicken the gravy naturally. Best gravy ever.

I'm here looking for tips too. Have you tried adding poultry seasoning? It makes a wonderful difference, especially if you don't have pan drippings. For the recipe above, I would add 1/2 tsp poultry seasoning.

I know how to make gravy, but decided to try this recipe yesterday - fantastic and simple! I was on butter taste overload, however, and next time I might use the fat from the drippings rather than the butter. Either way, thanks for this!
This will blow your mind. Use the pan leavings. Add flour making a roux using the drippings. Then ad spinach water/ carrot water, and or wine, and or stock to the roux its truly much better

Oscar Madison on gravy: “I thought it just ‘comes’ when you cook the meat!”
if you don't have a fat separator, I put the juices in a big bowl and let it sit for a few minutes until the fat came to the top. Then stuck my baster in below the fat line and sucked out the liquid into a measuring cup. I had to simmer for longer than expected, about 20 min to get it to thicken up.

@@thesauceandgravychannel So I did a gravy thickened with cornstarch like you’ve shown before and it was super easy and thickened quickly. It was super yummy, I did a white wine and turkey stock one. I think I like it thickened with flour better but everyone loved it, including me!

Did you know that animal fat (saturated fat) is actually good for you? So is butter! It's ok to have some of the fat with the gravy. Nice recipe! Trying it today! Happy Thanksgiving!

@@thesauceandgravychannel - It was perfect! Everyone loved it! But instead of using butter to make the roux I used some of the ghee dripping that I slathered on the turkey before baking it. I'm not sure how much of a difference it made but it was awesome! Best gravy I have ever made at Thanksgiving!
We had a big family, so Mom would roast a 22-lb turkey. She'd put the drippings in a frying pan and do pretty much like you did, but she'd make a rue of water and flour in a tin measuring shaker cup with lid and shake 'til mixed. Pour the rue into the drippings, stirring all the while until it is as thick as you like. Buy yourself a product called Gravy Master from the NE (NOT Kitchen Bouquet, ugh!), tilt the small bottle and drizzle into the thickened drippings until the color of the gravy is to your liking (there are spices in the Gravy Master, so be careful of using too much salt), stir until rue is fully incorporated, then remove from heat and if you don't like gibblet gravy, strain the bits and any lumps left. I guarantee you'll love the gravy even more than yours with the margarine or butter.
You can use Gravy Master for most meats with excellent results. Amazon sells it, but if you don't buy at least a three bottle package, it can be expensive.
I myself have used turkey broth thickened like my mother did, using Gravy Master and the result was perfectly seasoned.

It would need to be 100% pure cornstarch and most people like to use companies that only creates gluten free items. Some manufacturers produce 100% pure cornstarch but also manufacture flour and gluten products - this could lead to cross contamination. So, you may want to look for a manufacture that only produces gluten free product.

Never understood the purpose of skimming the fat out of the drippings only to add the drippings to a butter-fat-based roux, anyhow. Why not just use the fat from the drippings to create the roux?
Nice point. The great thing about making a homemade sauce is that you can make it to taste. There is nothing wrong with using the drippings fat. If it tastes good to you then use it. There is no right or wrong way - only the tasty way😊
For me, 10 minutes was way too long. My roux started to turn blond at 2 - 2 1/2 mins. .... Still turned out very good.
I shudder at the thought of jar gravy. Ive been making gravy for years, I learned from Mom who was excellent in the kitchen but I'm trying to up my game by watching you. Did I hear you use the m word as a butter replacement? That thought make me shudder too. Have you ever used the turkey fat to make the rue? That's what I normally use.
Watched a few videos, think I’m gonna stick with this one, maybe add some paprika and hope it works out. Only a few hours until dinner and just waiting for the turkey to be done so I can make the gravy.

Why keep out the Turkey fat but then use butter for the roux? Why not just use the Turkey fat to make the roux?
I always put the giblets in a small saucepan with onion/celery/ carrots, salt, pepper, sage and water. Let simmer on the back burner until needed for the gravy. Remove the giblets and veg and use as your gravy liquid.
The giblets offer such a nice flavor so I do that too. And it doesn't waste more of the animal.
Just don't tell anyone who's squeamish!
I do the same but also toss in the neck for extra flavor. I start the stock before the turkey goes into the oven, sometimes I use a crock pot too.

It isn't the fat that causes heartburn - it's the sugar you had with it somewhere else in the meal.
My dad used the drippings and let it simmer in a pot with turkey neck for a few mins then remove the neck add flour and water to likeness

I like to use the turkey fat to make my roux.
How do you get those beautiful brown bits at the bottom of the pan without burning them? so you add a quarter inch of water to the pan to start?

@@hollygreene4239 yes, you can deglaze the dripping pan with wine. For this recipe I would typically use white wine. I would add the wine first to the pan and reduce over medium heat until pretty much gone then add the stock/broth to the pan.

Put some butter in with your turkey while it cooks and you wont need stock…
If you put up with the rest of the meal just to get the gravy . . .
Rather than use butter, I normally add the flour directly to the pan with the drippings and use the turkey fat with the flour for the roux. Once the roux has cooked enough, I would then add chicken stock to the roux to deglaze and make the gravy at the same time. For me, I like the rustic homemade texture with the turkey bits in the gravy.

You mention to not cloud it up with vinegar or lemon juice, but I’ve always felt that some acid is a great addition to many dishes, especially soups, sauces and gravies. Is there a reason for not adding the brightness that comes from acid?

A cornstarch slurry can be used:
Ratio of Cornstarch to Cooking Liquid (there is no exact science to this):
1-part cornstarch to 2-part cooking liquid - is a good ratio to use
Amount of Cornstarch used to thicken 1 cup or 250ml of Sauce or Gravy:
- Thin sauce .5 tbsp or 3.75g
- Medium Thick sauce 1 tbsp or 7.5g
- Thick sauce 1.5 tbsp or 11.25g
