Made the bacon jam yesterday after watching your video - had to run to the store for onion, but it was worth it. I had slider pretzel buns on hand, so I buttered the tops and added bacon bits. Double cheese was a great idea! I took a few shortcuts, but you’re correct, the finished burger is even better than the sum of its parts. Delicious!

Have a whole grass-fed beef made into hamburger. It is a lean burger, but I also get the fat and make tallow to "butter" the patties. I also cook medium rare to rare burgers.
I'm going to have to try this. Especially the bacon buns. I actually prefer the burger to be medium well for a cheeseburger, I like the texture better. Might just be nostalgia, but it really tastes like a burger should in my mind. I also don't mind a medium rare burger though, especially with homemade mac sauce and pickles.
You should bring on Evan or other L&L staff and have a burger cookoff video. The Chud contest series could make for fun summer content!

If you flip your stand mixer you'll find a flathead screw. Tighten it with a screwdriver and it will prevent it from jumping when kneading doughs.
