How I cook my Nigerian Vegetable Soup

  • Vegetable soup , popularly known in Nigeria as Edikang Ikong, is a popular dish eaten in the southern part of country. The art of cooking this delicacy is well mastered by residents of Calabar and they are more than willing to teach this recipe to any one.
    The delicious nature of this meal has made it quite popular among other tribes as well.
    The common ingredients used to make this include
    Fish and Meat of any choice
    Little to no water
    Pumpkin leaves (Ugu).... In the diaspora, I find Kale a better substitute (after-all cooking is dynamic )
    Water leaf (Spinach being a very versatile leaf does great justice when water leaf isn't available )
    Crayfish ( Dry)
    Fresh palm oil
