What a BRILLIANT tutorial! A few months ago I looked for a thorough introduction to curves in Blender, and couldn't find one. And then I found your tutorial. It's super-easy to follow, and introduces the viewer to very powerful, subtle tools for controlling curves. A thousand thanks for taking the time to make and post this. With greetings from Cape Town!

If you know you are going to create a symmetrical shape, you can use a Mirror Modifier rather than duplicating and joining your curve. It will copy the Curve Type, so the Vector "curves" will remain low poly even if you later decide to Apply the modifier and modify each axis individually.

Watch my video on the Curve Pen Tool that was added after this video was made, it allows for more immediate editing like you describe. But there is a benefit to this method because it allows you to select multiple curve elements and operate on them as a unit. But yes, I know it's a lot of clicking. Use the Curve Pen Tool instead.

If you select a point, and then switch to the Move tool on the left hand side tool bar, then you'll see a widget appear. I'm guessing it was one of the handle components. The blue box is the Z-grid planar move component.
