Brava! Apart from being beautiful, this is an excellent dish to make if you don't eat meat. It contains complete protein as it uses eggs and milk. Not getting enough of complete protein (meaning protein including all essential aminio acids, which are indispensable organic compounds needed for our survival that cannot be synthesized from scratch by the human body fast enough to supply its demand, and therefore must come from the food we consume) is common among vegetarians and especially vegans. Furthermore, while soy beans and legumes in general are rich in protein they do not contain 100% complete protein. This is of utmost importance to be aware of. Although I haven't tasted this particular vegetarian lasagne, I'm sure it's delicious. Note how it's made without any herbs. Italians use less herbs than people in other countries (like Sweden, where I'm from) tend to believe. For instance, traditional bolognese sauce, ragù bolognese, never has any herbs in it. Even if Italians certainly do use herbs in some dishes, the outstanding quality of Italian vegetables and many other ingredients makes boosting the flavour with a lot of herbs and spices unnecessary. Personally, I eat meat, but I'll be making this dish (with cheese though) and serve a friend of mine who doesn't. Thanks for yet another astonishing video!
