  • In today's video I share with you my favourite winter meals. From plant based lasagne, to seasonal beetroot tart this meal prep video has everything you need for winter. It can be hard to incorporate healthy food at this time of year so hopefully I can provide you a little inspiration.

    My top tip about lasagna (stolen from Jamie Oliver) is to turn the oven off and leave the lasagna in for 15 mins before serving up, as it'll then hold it's shape a lot better when you serve it up. Looks delicious! and (boring, pedantic fun fact!) Lasagne (with an E at the end) is the pasta sheets, lasagna (with an A) is the name of the dish.

      Hi Angela, I love the little fun fact about the use of ‘lasagne’ and ‘lasagna’... I love words, so to me this is not boring or pedantic at all 😃. Also, I always do the same trick in the oven with my lasagna to firm it up before serving. Geez, we must be two peas in a pod, eh? Thanks so much for sharing this great comment...     Here’s an extra tip for those who grow their own tomatoes 🍅 (or have access to tomatoes) in the summer time. Years ago, I used to can tomatoes but it is quite labour intensive (especially on a hot summer day). What we found works equally as good, but is 100 times easier is to throw the whole tomatoes in a bag in the freezer. You can then use them throughout the winter in recipes that call for canned tomatoes. Just chop them up when they are still slightly frozen and throw them in your soups, stews, sauces, baked beans, etc. It is sooo simple!! Immy, I can perhaps see you doing this with your homegrown tomatoes one day, eh? 🍅🌿🍅🌿

      So true! When I didn't use my tomatoes in time, I sliced them up and froze them and they were perfect when I used them in spaghetti sauce later. :)

      @@lulaboola74 You’re welcome. A bag of whole tomatoes in your freezer means you can skip the canned tomato aisle in the grocery store all winter long (or skip the canning process in the summer time). Also, homegrown tomatoes have so much more flavour than purchased canned tomatoes.

      Hey ! There are super high quality and sustainable french brands who make one of those (Staub, Le Creuset, ...). As far as I know, they have factories in France :) It really worth the investement (i have mine for like 10 years and my parents for +20 years)

    I made a lasagna last week using zucchini as noodles and yours looks so much better! Ugh I'm having such a hard time with food today :( that apple thing looks amazing too. But I'm also sick of cooking for hours every day. I'm eating so much veg that we're constantly out of food and I just don't know what to do anymore!

      Oh I hear you! This is the only reason I try to make big batches of things so I can be lazy on most of my days haha. The freezer is honestly my life saver!

    I now know what to do with the beetroot that just sits there saying...'I'm healthy please find a way to enjoy eating me!'     Favorite tip with garlic (stolen from Sorted Food): If you have a microplane (which many do for things like ginger, and if you don't, I often see it in secondhand stores), you can pretty much microplane the garlic without peeling. It won't let the peel through. You do have to be somewhat careful about pulling the peel off, but if you're in a hurry or just don't feel up to chopping, it can be a really fast way to get garlic prepped.

    We grew apples and we would always have lots left over so we would give them to our animals and eat tonnes. I never thought of freezing them some how great idea!

    Another to for easy peel garlic - soak in hot water for 5 mins or so and then you just cut the root off and it pops right out when you give it a squeeze. Really loved all these recipes!

    I will make this tart tomorrow!Usually I make a Flammekueche with sort of a pastry dough and some horse radish and (vegetarian, not vegan but I guess there's an alternative) sour cream. So: Thank you for some variation! :D

    Soaking whole lentils like the green lentils over night n then cooking it makes it easier to digest and makes nutrition more bio available 👍🏽 lovely video as always

    Hemp + Rice milk are great for Bechamel too! Neutral flavours. I used Soy Milk once and it just reminded me the taste of my brew 😆

    For the tomato paste....in some shops (especially arabic ones) you can get canned tomato paste which is better than using the tube version

    Tip for if you're going to try and grow tomatoes sometimes they get a little wimpy looking so I'll take seaweed and crunch that up and put it next to it and it wouldn't be the seaweed you would get at the store I find it on the beach because I visit a beach house when I visit grandparents but you can find organic seaweed that's right nurseries I'm sure there's also liquid seaweed stuff too but I don't know how that's packaged but if you have a chance to go by a beach and there's tons of seaweed you can pick some of that up air dry it and then crunch it up for your tomatoes and make some amazing fertilizer.

      This is an amazing tip. Thank-you so much. We grow lots of tomatoes in our summer green house. If ever we are near a beach, we shall be collecting some seaweed & drying it for natural fertilizer. I’m not sure where you live, but I do know that on the East Coast of Atlantic Canada (in the early part of the 20th Century) it was common practice to harvest and dry seaweed for the purposes of field fertilizer, as well as a supplemental feed for horses. Thanks again for the 🍅 tip.

      @@marycharlebois6627 yeah. I live on the north coast area, a few hours away and we visit grandparents who have a hose on the bay. It really helped me a lot. I was growing cherry tomatoes and once i put seeweed on the soil they look amazing.... You can aldo do this with strawberries too. I got this from a show called grow cook eat and they have amazing growing advice. I found it ln Amazon prime video, but you probably can find it on TH-cam. I wish you luck with your tomatoes 🍅

      Hi Geri, my partner and I moved to fully plant-based eating approximately 2 years ago. We have a summer garden, greenhouse, and a few fruits trees. Like you, we were already heavy on the fruits and vegetables. I have to agree with your comment about the food processor and the Dutch oven. I already had a Dutch oven, but I waffled for almost a year before I finally bought a food processor. I dislike having a bunch of kitchen gadgets that I don’t use... but I use my food processor constantly and it is super helpful for cooking vegan food. I have absolutely no regrets on that purchase what-so-ever. Long live the frozen tomato... it sure beats canning them 🍅. I enjoyed reading your comment. I, too, find Immy’s videos to be very relaxing, creative, and inspiring.

    Excuse me friend, does this come with wine? I cook with wine... sometimes I even add it to the food 🍷haha!! If these recipes are “IPA” (not 🍺... IPA = Immy’s Parents Approved) then I’m in 100%, LOL!! Thanks for sharing all your kitchen inspo and slicing, dicing, and beet peeling efforts Immy. Love it!! PS - we’ve got a root cellar full of beets and winter root veg... and I’ve been waiting for this video... gonna slog through the deep snow this morning (PNW 🇨🇦, 8 hours behind your time) and get me some veggies & get cooking 🌿🧅🥕💜

    I am with you on the vegan cheese. I do like homemade cashew cheese sauce and tofu ricotta

      Haha no no I LOVE this oven, it makes me the most perfect rice and baked goods and everything, it's just not the most eco-friendly even though it's an electric one. But hopefully when we have solar it will be fully functional from that so will end up being sustainable I hope!

    grated vegan cheese freezes really well, that way you can have it when you want it and not worry about waste. Works well from frozen as cheese on toast, quesedillas and of course in sauces.

      @@SustainablyVegan Ah, gotcha. I'm in the US and it's new-ish here. It's almond based so it might be something to try making from scratch anyway to avoid the plastic packaging. Either way, I'm super excited to make your recipe for lasagna!

    Wonderful video! Thank you 🤗 I wanted to give you a tip for cutting onions. Don't chop off the root end until the very end! The onion stays together and makes chopping way easier. There are lots of videos that illustrate this really well. Thanks again!

      @@SustainablyVegan yeah, back in the day those workers used to make that dish for their clients beacause it was quick and easy, and every italian has the ingredients in their pantry. It literally means "pasta the sl** way". So funny

      Indeed. Do you know why?
      Some long time ago, in Italy, pr*st*t*tes were allowed to go to the market once or twice a week. So, the rest of the week days, they would cook pasta with other ingredients than fresh veggies from the market that is: oil, garlic, "preserved" (I am not sure about this word but I hope you understood what I meant - my English is not always accurate....😅) anchovies and a little tomate sauce (the real base of the receipe)

    For covering things in the oven, I use my silicone baking mats to avoid using foil. It’s not as good as foil of course, haha.

    I see your cutting board moves sometimes while you are cutting.. You might want to try putting down a thin silicone mat or getting a damp towel and placing it under your cutting board… Thank you for your wonderful videos ❤️❤️❤️

    I wish there were more vegetarian/vegan meals that don't emphasize tomatos- as (gasp!) I dislike them. The beet and onion tart looked amazing to try though! Also, do you have any tips of how to and how long to freeze things? Like, I didn't know you could freeze apples?! I'm always afraid of things getting freezer burn, botulism, etc. And confused as what containers are good to freeze stuff in. So yeah, just totally lost.
