I was born and raised in Texas. I couldn’t wait for the Hatch chili to come to our area. They would set up a huge fire ring and roast and sell the chilies in 25 lb increments. I always got 50 pounds at a time as I cook Mexican food daily. My husband would take the freshly roasted chilis and clean off the skins and put in freezer bags and we would have green chili stew, Posole and make and can green chili for enchiladas…... our boys loved to help and it was really a great week for us. This video just made me remember how wonderful that time was. Boys are married now and I still get calls about how to make…….whatever recipe they wanted to cook. Your recipe is almost exactly how I make mine. Thanks to you the memories came flooding back. I think we are having chicken green chili enchiladas tonight. Thank you!

People dont realize the better flavor enchiladas of red or green chili it gives instead of using raw corn tortillas. Another New Mexican tradition is an over easy egg on top of yum!❤❤
Saw this video Sunday morning here in Kentucky. So after Mass, it was right to Kroger for a few ingredients I didn’t have. Used the Muenster Cheese as suggested. After pulling my chicken off the rotisserie chicken I poured hot water right in the bag with bones skin and all, let it sit for a bit while preparing other ingredients, strained that and used it for my five cups of water. Had the 505 Southwestern Hatch Chile that I had previously purchased from Costco. Made it just as shown. GOODNESS! This is a keeper! Put a bit of sour cream on my fork with every bite. Yummy, THANKS!!!
They look really tasty! Just like mom used to make and we still do, learned from the best! I always called enchiladas that are stacked New Mexico style, but my aunts and cousins in Chihuahua also make them this way. Hi from Silver City.

Yes. My local grocer here in the Texas panhandle used to carry frozen roasted hatch red chilis, and also medium green chilis frozen. The red chili was a puree. It was a brand that had the New Mexico st add ye flag insignia on the packaging. That went away. Now reluctantly they no longer have the red chile puree any longer have any brand of the red chile puree of any brand. But they alternate between the 505 brand and bueno. The nueno tastes great and costs less than the jarred 505. So I get bueno when available.

I always thought the same until a friend gave me chilies from Lemitar. About 120 miles north of Hatch. They are not easy to find! Fortunately in chili season, Rosales Produce from Lemitar has a stand they open up here in Abq. Similar but richer, deeper flavor. I think they also sell online during season.

Excellent. It's a good thing I'd already had breakfast. I prefer these in a casserole, specifically because as great as they are out of the oven, I think everything melds for a richer flavor in the fridge over night. I love reheating in the morning and covering with a couple over easy eggs for breakfast. I'd have them for every meal until gone, if I could get away with that! Awesome, thank you for sharing!

I was planning to make green enchiladas for a Sunday dinner after church. I was making them into a casserole, also. I usually cover chicken breast with chicken stock and bake in the oven until done and then shred the chicken. I use the rest of the liquid with some more water in the sauce, but pretty much the same as you do otherwise. I can attest to a tasty recipe.
Immediately add in the Pueblo green chilie 🤭 plus I fry using avacado oil avoiding seed oil ~ I'm making this on a cold January watching the play off's ML thanks for posting
Good morning Marcy & Tony, yes that's the classic way I make mine handed down by my Grammita & Mom my daughter makes them this way also and Chilaquiles style.
It’s so much better this way then when it’s made with cream of soups. I like to add a sort of rice pilaf to the stuffing when I roll them. So it’s chicken with rice that I have made with chicken broth, sautéed onion, and either poblano or green chili peppers. I put it in the center of the rolled enchiladas with just a little bit of cheese. Just cheese and chicken seem to make the inside of the enchilada sort of dense and oily to me. I think putting the rice in there lightens it up a little bit. Things aren’t so compressed. Thank you for reminding me of my youth, growing up in the four corners of New Mexico.
Oh my, that looks delicious! I have some home roasted Hatch chiles in the freezer and I'm so stingy with them, but this might be the day to break them out! 🤣 I may serve mine with a small spoonful of sour cream on the side. 💕

This is legit. Keep in mind, this is receta original pura. If you have top shelf chile, this will let it shine. I put a pinch of cumin and a spoon of Mexican oregano in mine. I also don’t go with Hatch typically. In northern NM we use small chilies grown at altitude. Blanco, Espanola, Chama, etc. Hatch is widely available though, and is a damn sight better than Ortega out of a can. That was all you could get back in the day if you left the land of entrapment. I hope Marcy keeps inspiring! #Legit NM

Hatch green chili, the best ever. Since I'm trying to watch my carbs, I leave out the corn tortillas, but use the rest of the ingredients as a casserole and sometimes top my portion with greek yogurt for added protein, as well as cutting the heat from the chili.😋
I hope you don't mind me using canned Hatch green enchilada sauce when I make mine. As an elderly widower, this is easy for me and the results are always very good, although I'm sure your homemade sauce would take the top prize.
I love munster cheese. Being from Wisconsin I forget people don't have massive varieties of cheese at their stores. But I can only find jarred or canned hatch peppers.

I hope you don't mind me using canned Hatch green enchilada sauce when I make mine. As an elderly widower, this is easy for me and the results are always very good, although I'm sure your homemade sauce would take the top prize.

I love munster cheese. Being from Wisconsin I forget people don't have massive varieties of cheese at their stores. But I can only find jarred or canned hatch peppers.

YES!!!! When we bought this house, I told Tony I could already picture the luminarias! I'm so looking forward to decorating for Christmas. I should probably start shopping for them now, as it's not practical for us to use real candles.
