Fried eggplant is yummy. Here I usually eat them with Javanese sambal (made of crushed chillies, tomatoes and salted shrimp paste).

This sounds absolutely delicious! Javanese sambal (Indonesian sauce) is supposed to give fried eggplant such a rich and spicy flavor. I'll have to try this method too - thanks for the idea! 😊
