    In this video I show you how to make fresh EGGLESS spinach and ricotta ravioli at home without using eggs. It is a vegetarian and egg free fresh pasta recipe.
    I will also show you an indianized SUBSTITUTE FOR RICOTTA CHEESE
    So now you can make delicious gourmet pasta in your home kitchen !

    Ingredients
    All purpose flour - 150 gms
    Salt - to taste
    Water - as needed
    spinach- 100 gms ( 2 cups)
    olive oil- 1/2 tbsp
    garlic - 2 cloves
    Malai paneer / ricotta cheese - 100gms
    processed cheese- 1/2 cube
    pepper - to taste
    salt to taste
    olive oil - 1 tbsp
    garlic - 2 cloves
    cherry tomatoes- 150gms
    basil leaves -6-7
    salt - to taste
    pepper - to taste
    sugar - 1/2 tsp
    cream- 2 tbsp

    I tried your recipe and it turned awesome. My family loved it so much. It tasted same as restaurant style. But I used regular tomatoes n char grilled on gas.

    Delicious. A suggestion.. add 2tsp barik rawa to the maida to get a really tight dough. Just bring together, rest then pound with a batta to make it pliable. Now rolling it really thin is easy!

      Thanks for trying my recipe ! You can use cashew creamcheese too or a mix of cashew creamcheese, tofu and nutritional yeast.

      Yes you can use semolina. Just be careful to add water in very small increments, or else before you know it the dough will get too soft.

      You're most welcome. Yes you can freeze and store them for 30-45 days. After boiling them, coat them in oil and freeze them individually on a plate. So that they dont stick together. Then u can put them in ziplock bags or airtight container in the freezer.
      To use, thaw them at room temperature, then dunk them in boiling hot water for 2-3 mins and then proceed to use it anyway that you want.

    Tried your recipe, it turned out very nice except the ravioli dough...it was very tight and unable to manage with boiling water. Infact we can knead the dough like we do for momos then it might turn out good enough.

      You can always try but it will become very slippery and slimy. And may open in boiling water. Momos are steamed whereas ravioli is boiled.

    What is the brand of Parm that you are using? Is it easily available in India?

      In this video I have used dlecta grated italian cheese, it is a vegetarian hard cheese like parmesan. It was easily available in stores like hypercity and even online on amazon and big basket before covid.
      Although I checked right now, after you asked me and it is showing out of stock every where!! ☹️☹️

      This recipe makes about 8-10 ravioli. If this is the only dish on the menu without accompanying soup or garlic bread or some kind of salad then consider this dough recipe enough for one person.

      In India, we have only 2 basic flours whole wheat flour or atta and all purpose flour or maida.
      In usa, u get wholemeal flour ( which is slightly coarser than atta, it includes the bran that we usually sieve out ). Bread flour - that has 12-14% gluten, pastry flour (8-10% gluten) and also cake flour ( 6-8%). Self raising flour is all purpose flour with baking powder added to it.
      European countries have their own flour classification according to gluten strenght ( for eg. Italy ) or ash content (for eg. France).
      For all intents and purposes, If u r following any indian youtuber's / blogger's recipe, APF = MAIDA.

      This recipe yields about 8 plump ravioli with generous amounts of filling. The dough is slightly more than required for 8 ravioli. You can consider this recipe enough for one person.

      Hey thanks for appreciating the recipe.
      Spring onion greens may work, I have never tried that combination. You will need tonreduce the quantity of the greens and increase the quantity of ricotta in that case as spring onions r much stronger in flavour as compared to spinach.

      Maida is more suitable. Although You can use atta. But the result wont taste the same.

      You can use dried oregano or mixed pizza spicemix/ seasonings. you can also use the seasoning satchet that you get with domino's or any other pizza.

      This is not a 100% authentic , but tastewise it is quite similar. esp.since true ricotta is very expensive here in india.
