Kikurage / Wood Ear Mushroom Recipes: Ramen, Salad and More

    Wood ear mushrooms have a special place in the mushroom world. Unlike other mushrooms, they have no flavor of their own, but are purely a textural component in cooking. In the video I briefly go over a few things about them, including how to tell the differences between different species sold at Asian grocers which can all be simply labeled black fungus.
    Their mild taste and chewy texture is great in a lot of things, most of them being highly seasoned like the salad and ajitsuke kikurage ramen condiment I go over briefly in the video. The ramen is killer. All the recipes I mention are described in the post linked above.

    One of your longer videos, but it went by too soon. For some reason, I'm not finding wood ears lately. I guess I'll have to buy some to try these recipes.

      Thanks Dean. Yeah I try to keep them short but sometimes It's necessary. Had to include the little clip from my visit to see Sam. :)

    Thank You for the recipe ideas, I appreciate it a lot. I pick these mushrooms near my home, but I kinda hated the texture without the taste, so I dried a bunch without really knowing what to do with them. These recipes do look awesome. Quick question, what are gluten free ramen noodles You showed in the video? I can't have gluten too.

      There's a number of GF brands, just look for packaged Asian noodles at a local coop or a decent grocery store. They come in small packs just like regular ramen.

      IK. Sucked I went to Italy last year and tried to have their bread. Unfortunately didn''t work for me there either, def agree with you though.

      @@jacktheripperVII Some have both. Some only have the bouillon powder. I make it however I’m feeling with what I have on hand, and you should too.
