Chopped liver - Jewish traditional dish

  • Chopped liver is a traditional Jewish dish.
    A very simple and delicious dish.
    Recipe:
    1 kg chicken liver
    7-8 onions.
    salt
    paper
    eggs (optional)
    Cut the onion into half rings.
    Clean the liver
    Heat a pan with oil.
    Put the onion in the hot pan, add salt and paper and fry.
    put the onions aside.
    Add some more oil to the pan and add the liver.
    Add salt and paper generously. Fry on a high temperature.
    Put the liver in a plate and let it cool down for at least half an hour.
    Put the onion in a food processor and make it farely chooped. Then add the liver and chop some more.
    finally you can also add some aggs (3-4). We like it without the eggs.

    Just seeing this now much later than it was posted.
    Reading the other comments I must add the following.
    I personally love chopped liver. Usually make a large batch and freeze it tightly in ziplock baggies. Freezes very well.
    Concerning the comments about chicken liver verses beef liver. I usually make it with chicken liver. Once the store was out of chicken so I bought beef liver.
    I found beef liver to be much more gamey. Didn’t like the taste whereas chicken liver is much more subtle.
    I usually add eggs. That’s the way I learnt from mom & grandma. Got used of the taste.

      You can definitely add eggs if you prefare with eggs.
      I forgot to add once and found out that I like it more without the eggs.

      The taske of chicken liver is milder and more gentle. Also chicken liver is softer. I personally prefare chicken liver but you can try it with beef liver and let us know how it came out 😀

    Nope, no hard boiled eggs, you need chicken fat.(smaltz).
