For primary fermentation use a larger bucket to allow more room for the yeast to work its magic; the larger bucket also allows you to add fruit/mint/etc easier. 2. Transfer to the large glass carboys for secondary fermentation. 3. Finally transfer to bottles for aging.

Steep the rosemary and the sage in hot water for fifteen minutes or so (one liter every five liter of mead you want to make), filter the spent leaves out and add it to the must. Then add the lemon zest and some fresh rosemary and sage leaves in primary. The drier it gets, the better it is, but you can backsweeten it to fit your tastes more. Goes great with red meat.
I feel the holiday meads should reflect something eaten that time. Like Apple Cider for October, Pumpkin for November, and maybe Peppermint for December?
use a 6.5 or 6 gallong carboy. You need more headspace in primary fermentation. Then rack into a 5 gallon for secondary where the headspace you have now is ideal.
